COCONUT FILLED CHOCOLATES

Hello everyone

Who doesn't like chocolates ? If you ask this question to kids or even to elders too, then you get the same answer from everyone that we all love chocolates. Even during festivals, people prefer chocolates over traditional sweets, to gift . And if it is home made then just icing on cake. I am a sweet tooth and always love to relish on all sweet things including different varieties of chocolates. But as a health conscious fellow I too have to check on calories sometimes. That's why I thought to give it a try at home , with my choice of ingredients and with balanced sweetness. And to my surprise my chocolates came out perfect in first trial, with mild sweetness and subtle flavour of coconut, just like bounty chocolates, which are kids all time favorite. 
I used dark chocolate bar  to prepare my choice of chocolates, you can substitute it with your choice.
Stepwise recipe is given below, hope you all will love to try this and don't forget to share your experience with me.

COCONUT FILLED CHOCOLATE



Yield: 16-20 chocolates( depend on size of mold)
Time: 15 mins ( excluding refrigerating time)



Ingredients 

100 gms dark compound chocolate bar
2 tbsp butter
2 tbsp powder sugar ( or as per taste)
1/4 cup milk ( as per need)

For filling:

1/4 cup desiccated coconut 
1 tsp powder sugar
1 tbsp milk ( as per need)


METHOD :

First of all prepare filling. Mix sugar and desiccated coconut. Now add milk little by little and mix well. When the mixture is moist enough to hold shape then your mixture is ready, no need to add more milk now. Make small balls of this mixture which can be easily placed in your chocolate mold. Keep balls aside for later use.



** only use required amount of milk in your coconut mixture, neither too dry nor too runny, just enough moist to hold shape easily.


Now break your chocolate bar in small pieces and keep in microwave safe bowl . Microwave it for 2 mins, stirring after every 30 sec to avoid burning it. Mine took 2:30 mins as my chocolate bar was chilled . 
You can also use double boiler to melt your chocolate. Take hot boiling water in a pot and chocolate in another . Now place chocolate pot over water pot, so that chocolate can melt due to hotness of water. *** But there must not be any direct contact between chocolate and water otherwise your chocolate will be ruined.


Now add butter and again microwave for 30 secs. Now add powder sugar and mix well. At this time your mixture will look little dry. 



So add milk , 1 tbsp at a time and stirring constantly to get thick yet smooth pouring but not runny consistency of chocolate batter. 



** No need to add all milk, just add as per requirement . As quantity of milk added depend on quality of chocolate bar, so add and keep an eye on your batter to get right consistency.


Now take your chocolate mold, I used silicon mold as it is easy to handle, pour little chocolate in each section and then place prepared coconut balls on it. Now pour more chocolate on each coconut balls , so that to cover it completely. Tap the mold to escape any air bubble trapped and place in refrigerator for 30 mins to 1 hr.


 Now take it out and demold, your yummy homemade bounty chocolates are ready to attack on☺️☺️.


* You can use any filling of your choice.
* You can increase or decrease sugar as per your taste.


* To make your filling more rich in flavour you can substitute milk and sugar with condensed milk as per requirement.


You can prepare these chocolates in any shape and size for your kids school party, for birthday celebrations or to gift any one. 


It's really fun to make your own chocolates and share with your pals.

CHOCOLATE JELLY PUDDING USING KIDS HEALTH DRINKS

Hello everyone

Everyone wants to pamper their kids  in their special way. So I thought why not to share some special , healthy and equally delicious cum palatable recipe today. I used left over energy drink powders in this pudding which my kids rejected to have. It's very easy yet really addictive pudding recipe you can make in minimum time and please your guests and specially kids. At the same time it's vegetarian friendly too , as I used agar agar instead of non veg gelatin. And if you are vegan then also can go for this delectable dessert, just replace milk with soya milk or any other vegan substitute. Step wise recipe is given below, hope you all will definitely give it a try and do let me know too how's it turned out for you.


CHOCOLATE JELLY PUDDING USING KIDS HEALTH DRINKS




Yield: 50- 60 pcs( depend on size of your mold)
Time: 30 mins

Ingredients 

750 ml milk 
6-7 gm China grass/agar agar
3 -4 tbsp sugar ( or as per taste)
2 tbsp Complan , chocolate flavour ( you can use any chocolate drink)
2 tbsp Raagi based health drink powder ( or substitute with above drink)
2 tbsp drinking chocolate 
1 tbsp cocoa powder
1/4 cup Hershey's chocolate syrup ( optional) 
1 tsp vanilla essence


Method:

Cut agar agar in small strips and soak in water for 15-20 mins.
Boil milk and add soaked agar agar in it discarding its water.
Now simmer milk till agar agar is completely dissolved in it. If you don't like bits of milk deposits ( malai) in your pudding then strain your milk at this stage. I skipped as I like little bits of malai in pudding. 



 Take some warm milk in a cup and add all dry powders in it. Mix well to make smooth paste. 



Now add sugar, prepared paste and vanilla essence in milk, stirring constantly to avoid making lumps. Switch off the flame . Add Hershey's chocolate syrup for more chocolaty flavour ( optional).



Let it slightly cool , only for 4-5 mins (otherwise it will set in the vessel it self) and pour in desired mould. 



Preferably silicon mold, it's easy to demold and comes in pretty shapes and designs. Keep it in refrigerator for minimum 2-3 hrs then serve chilled. 



It can also set at room temp but tastes best when chilled. You can also adjust sugar as per your taste. You can use any health drink available in chocolate flavor or can make other flavor jelly pudding too. For more taste condensed milk can also be used. 



My little ones love this dessert very much, if your kid don't like milk and health drinks then it's better way to feed him some in yummy way.

NO BUTTER EGGLESS CHOCOLATE CUP CAKES

Cakes and cookies are always fascinating not only kids but elders too and specially chocolate one. Chocolate flavour is one of the most liked flavour in the whole world. Every second kid demand chocolate flavour whether he is asking for cake ,ice cream ,cookies or milk. Every where they fall for chocolate one and my lil fussy eater is also falls in the same category. For him I always have to go for chocolate flavour stuffs๐Ÿ˜ƒ. So I planned to make some chocolaty surprise for kids on this republic day , but a cake in whole can't be finished by them and I was not in mood of indulging any more calories. Finally  I tried chocolate cupcakes and it turned out so soft and moist that he loved it too much( even I too goblled one whole cup cake beside ignoring calories ๐Ÿ˜œ) .
It's step wise recipe is given below, do try and let me know too, how's it turned out for you๐Ÿ˜Š

NO BUTTER EGGLESS CHOCOLATE CUPCAKES



Serves: 9 medium cup cakes
Time: 25 mins

Ingredients 

3/4 cup all purpose flour or chapatti flour , I used later one
2 tsp corn flour
1/4 tsp baking soda
1 tsp baking powder
2 pinches salt
1/4 cup cocoa powder
1/2 cup sugar, I used little less
1/2 tsp vanilla essence
3 tbsp oil
1/2 cup milk

Method:

First of all mix all dry ingredients together except sugar. Sieve flour mix to ensure even mixing. Keep aside for later use. Now add sugar in milk and mix till sugar dissolves. 


Add oil and vanilla essence to milk and mix well. Now mix dry and wet ingredients together and fold to get a smooth lump less batter. 


Pour batter in cupcake molds lined with cupcake liners. Fill molds up to 2/3 height only as it will rise on baking. 


Now bake for 15 mins in a pre heated oven at 180degree C. Keep an eye on it after 12 mins as different oven takes different time for baking. Mine took exact 15 mins . Time may vary from 12 to 20 mins so keep checking for doneness . Insert a tooth pick or skewer in middle of cupcake , if it comes out clean then it's done other wise bake a little more๐Ÿ˜Š๐Ÿ˜Š.


Let it cool and serve to your lil munchkins they will sure gonna love it and ask for more. Even you too can't resist yourself from gobbling one or two of these. Either have these as it is or decorate as per your choice, in both ways it will be droolicious. I made it on republic day so decorated in tricolor with home made veg fondant ๐Ÿ˜Š.This is a perfect picnic or tiffin snack. Have it with a cup of tea or serve in evening snack to kids.

MICROWAVE EGGLESS NO BUTTER CHOCO SPONGE CAKE

Today I am sharing a very easy yet tempting eggless chocolate cake which I made for my daughter's b'day. Icing or frosting is your own choice , whether you want or not but this cake itself is just an awesome delight for your guests on any occasion. As you know I always try to make stuffs healthier as much as I can. So here also I used 50:50 APF and whole wheat flour and substituted butter with refined oil. It's all time favorite cake of my kids and hope you all will also like it. Recipe is adapted from Tarala Dalal's recipe with my own twist and turns.
Recipe is given below .

 MICROWAVE EGGLESS NO BUTTER CHOCO SPONGE CAKE




Ingredients

3/4 cup all purpose flour ( maida)
3/4 cup whole wheat flour
3 tbsp cocoa powder
1/2 cup refined oil
3/4 cup water
3/4 cup sugar ( I used little lesser )
6 tbsp yoghurt ( curd, dahi)
3/4 tsp baking soda
1 tsp vanilla essence



Method:

Beat yoghurt well and mix baking soda in it softly, keep aside. Now mix both flours and cocoa powder together. Heat water in a microwave safe bowl for 2 mins at high. Then add sugar, water and oil together and mix well till sugar dissolves . Now add yoghurt mixture, vanilla essence and flours in it and fold gently to get lump less batter. Transfer batter in a greased microwave container and microwave for 5 mins at high. Check for doneness by inserting knife or skewer in middle of cake if it came out clean then done , otherwise microwave it for another 30 secs. Different microwave may take different cooking time. Mine took exactly 5mins 30 secs. Let it rest for 5-10 mins then invert on a wire rack and let it cool completely before doing any frosting . 






As I made doll cake for my daughter's b'day , so for it I made two cakes using this recipe , one round and other dome shaped of same diameter .Arranged it one above other and placed a doll at top then did frosting. If you want extra flavour then can cut cake horizontally and apply some cream on it , I added Nutella layers in between each layers.
