NO CREAM, JUST THREE INGREDIENTS NO COOK MANGO ICECREAM

Hello everyone

Today I have summer cooler easy peasy ice cream recipe. As summer started and everyone need some chilling cooler to beat the heat.
With hot summer the first pleasing name comes to mind is the king of fruits MANGO. I think no one can say 'no' to this yummy droolsome fruit, everyone from kids to elders love it, Even my mom is a big fan of mangoes. So thought to try my hands on mango ice cream without using cream but with easily available handy ingredients with no compromise in taste. It is so easy, no cook , no fuss recipe that can be prepared in minutes. And the end result is so tempting and yummilicious that you can't resist yourself asking for another one.  Even my fussy eater kids loved it.
Step wise recipe is given and hope you all will like this summer cooler.

NO CREAM , JUST THREE INGREDIENTS NO COOK MANGO ICE CREAM



Yield: 10-12 ice creams, depend on size of mold
Time: 10 mins ( leaving freezing time)


Ingredients 

3 big size , nice ripe mangoes, roughly chopped
1 cup milk powder
Sugar to taste ( depend on sweetness of mango), I used left over syrup of rasgulla 

Method:

Take all ingredients in a blender and churn to nice thick smooth paste.


 I added little yellow colour and mango essence to my mango paste as my mango was just pale yellow.
** This step is completely optional, if you have nice orangish or yellow mango then no need to add color. 


Now pour the prepared paste in Ice cream molds and keep in freezer overnight or atleast 6-7 hrs.


Now demold icecream by putting mold under running water. Serve and see the happiness on faces , without any guilt.


Your prepared paste should be thick like idli batter. As I used little sugar syrup in my batter so very small ice crystals were formed after two days of freezing. 
You can also use canned mango pulp, nearly 2 cup.


You can also add condensed milk instead of milk powder and sugar to enjoy more rich flavor.

MIXED HERB BEETROOT OATS SAVORY BREAD

Bread is a thing which connects us to everyone in this world. Wherever you go, you can find bread in different shapes, sizes, flavours, textures etc but the main thing is it's bread. Today I too have a simple bread recipe to share. It's too simple too prepare but with healthy touch of oats and beetroot. It's a must try for health conscious bakers who love to bake for them and their family, healthy stuffs. It's a perfect snacks for tea time or for kids tiffin. So give it a try at least once, you will definitely love it.
Stepwise recipe is given below , hope you all will must try this..

MIXED HERB BEETROOT OATS SAVORY BREAD 






Serves: 4-5
Time: 3:30 hrs 

Ingredients

3 1/2 cup all purpose flour/ whole wheat or chapatti flour( I used chapatti flour)
1/2 cup rolled oats 
3/4 cup grated beetroot 
1/3 cup thick yogurt ( curd), beaten
1/8 tsp baking soda 
1 tsp dry active yeast ( I used little less)
1/2 cup Luke warm water
2 tbsp sugar 
1 tsp salt 
1/4 tsp oregano
1/4 tsp thyme
1/4 tsp rosemary 
1/4 tsp chili flakes 
Oil to grease loaf pan and dough
1/2 cup warm water to knead dough


Method:

First of all add yeast in 1/2 cup Luke warm water and 1 tbsp sugar, mix them lightly and leave for 5-10 min or till it become nice frothy.



Combine all dry herbs, salt,oats, remaining sugar and baking soda in flour and mix well.



 Now mix all dry and wet ingredients together , knead for 5 mins and let it rest for 7-8 mins. Again knead for another 2-3 mins to get nice soft dough. This may be little sticky due to beetroot and no oil. But don't worry, your dough is reedy This resting and kneading process is important to produce gluten in dough , so don't skip it.



Knead the dough by pulling and stretching it instead of applying too much pressure on your dough.

Grease the dough with oil and keep it covered at warm place to rise, at least 1- 2 hr or till it doubles in volume, depend on weather. 


When it become double in volume then punch the dough and again knead for 4-5 mins .



Now flatten it on a plain surface dusted with dry flour and by rolling give it shape of a loaf and seal its edges by pinching. 



Now place it in a greased and dusted loaf pan and brush some oil on it.



Again keep it covered at a warm place for second rise, for at least 45 mins to 1 hr or until your dough again rise to double.Now brush its top with milk.



Now bake it in a preheated oven at 190 degree C for 35 -40 mins or till its top become nice brown and on tapping you can hear hollow sound. 
If you see your loaf is browning very fast then cover it loosely with an aluminum foil.




Now brush it with some butter and let it cool completely on a wire rack before slicing, to get nice clean slices.



Your bread is ready to be served with a cup of tea, enjoy these easy yet delicious bread slices. You can also give it in your kids tiffin , either apply butter on it or make sandwiches. In every way these will win your heart.


As I didn't use any oil in this bread so it is little chewy yet soft and porous. This chewiness adds to its flavor but if you want crumbly texture then can add 2 tbsp oil to your dough.

You can use any herbs too and also any other loaf pan to get your desirable shape and flavour. But then baking time may change so after 30 mins keep an eye on it. Mine took exactly 40 mins😊.
While kneading If you find your dough is too sticky to handle then can sprinkle some flour on it , 1 tbsp at a time ,but the quantity given will be sufficient for a soft dough. Adding too much flour can result in dense bread. After kneading it well for 7-8 mins, it will become easy to handle it self.

LOW FAT VEG STRAWBERRY CHEESE CAKE

Hello everyone

One more Valentine special recipe which I made yesterday for my Valentine , he and kids enjoyed it a lot. As I always go for low calorie and low fat desserts, But cheese cake's richness of calories made me always hesitate to try it , though I am too fond of trying healthy and guilt free cooking, so came up with a healthy substitute of fatty cheese and cream used to make it. And to my surprise and good luck, the final outcome is just wow and of course a guilt free dessert.
Recipe is given below, hope you all will definitely like it.

LOW FAT VEG STRAWBERRY CHEESE CAKE




Ingredients 

1  lt milk 
1 tbsp lemon juice or vinegar 
1/2 cup fresh strawberry puree 
2 tbsp sugar, you can add more
4 gm agar agar( China grass)
1/2 cup water
12-15 any sweet biscuit, I used 4 belvita biscuits 
1 tsp ghee or butter

Method:

First of all boil milk, then add lemon juice or vinegar , little by little till it get cuddle. Then strain it in a muslin or any fine cotton cloth. Wash it under tap water to remove sourness of vinegar or lemon from cheese. Then squeeze it well and hang some where for at least 1 hr to drain excess water in it. Now your cheese is ready to use.



Soak agar agar strips in water for at least 20 mins. Then take 3/4 cup of water in a pan, add soaked agar agar and boil. After boiling, lower the flame and let it simmer till agar agar get completely dissolved in water. In meanwhile take cheese in mixer and churn till smooth, both not too much.


 Now add strawberry pulp and sugar in it and churn again for 2-3 pulses only. Now pour it in a bowl.


Now make powder of biscuits in a mixer and add ghee or butter in it. Take a greased pan lined with parchment paper or use springform mold of your choice, spread this biscuit ghee mixture in it evenly and press with a spatula to get a firm base.


Now in cheese strawberry mixture add agar agar liquid. Mix well and pour it on biscuit base evenly. Tap the pan to remove any air bubble formed . 


 Keep the pan in freezer for 10 mins or keep in fridge for atleast 2 hr.  For demolding , run a clean knife along its sides so that it leave the edges of pan then carefully lift it and place on a plate. Cut in desired shape, pour some strawberry syrup on it and serve chilled.


You can also prepare strawberry sauce at home, take half cup crushed strawberry and 1/4 cup sugar. Put in a pan and cook till every thing is nicely cooked and get sauce consistency, if needed add some water too.


 
Be careful with agar agar, as it can set at room temp too. So don't keep it for long after cooking other wise it will set itself. Always dissolve it when everything is ready.

VEG HALEEM

Haleem.... This one word brings a single thing in mind, that is non veg. But wait , here it's veg one. Yes , you heard right this is for veg fellows who ever wondered of it to taste but couldn't due to non veg . So here come easy but flavourful haleem recipe for all haleem lovers to try this for a change of taste.
Stepwise recipe is given below ,hope you all will give it a try, even non vegetarians too can try for a change 😊.

VEG HALEEM





Serves: 5-6
Time 40 mins

Ingredients 

2 cup soya nuggets , soaked and ground
3 tbsp Dalia ( broken wheat) , soaked
1/2 cup barley or red lentil( masoor dal), soaked
2 onions, finely chopped
3-4 green chilies, broken in half
1 1/2 tbsp ginger garlic paste
1 tsp turmeric powder
1 tsp coriander powder
2 tsp Kashmiri red chili powder
1/2 tsp garam masala powder
1/2 tsp cinnamon powder
1 tsp cumin powder
20 almonds + 4 cloves, powdered together
3/4 cup thick curd ( yogurt), beaten
1/4 cup mint and coriander leaves( equal ) , finely chopped
2 tsp lemon juice
2 tsp oil
1 tsp ghee or butter

Method:

Heat oil and ghee in a wok, add chopped onions and green chilies. Fry till transparent then add ginger garlic paste and sauté for 2 mins. Now add turmeric powder, cumin powder, coriander powder, garam masala, chili powder and cinnamon powder, add some water to avoid burning spices. Fry till it starts leaving edges of the wok and nice aroma comes. 



Now add ground soya nuggets and sauté for 3-4 mins then add soaked Dalia and lentil. Add sufficient water and salt, cover it and let it cook till nice soft and cooked.



 Now add almond clove powder and beaten curd. Adjust water and Let it boil . 



Add chopped mint and coriander leaves and lemon juice, adjust salt .Simmer for 5 mins and done.



Garnish it with chopped coriander leaves or fried onions and serve with roti, naan or rice.
I used red lentil in it but if you have barley then go for it otherwise lentil too give a delicious flavour and texture to the dish.

EGGLESS LOW FAT GARLIC MAYONNAISE

Hello everyone 
Now a days, not only kids but elders too gone mad over burgers, sandwich,pizza etc loaded with high calorie , high fat mayonnaise. But by health point of view these are not good at all. So I thought why not try some low fat, low calorie version of mayonnaise to go with these traditional fast food items  to avoid some extra calories without punishing our taste buds. This can be also used on simple whole meal or brown bread as spread, if you are health conscious fellow but can't leave the love of having yummy finger licking mayonnaise. I came across this recipe accidentally, as I was trying to make some different dip for my snacks and to my surprise it came out as super smooth silky shiny mayonnaise.
Recipe is given below, hope you all will definitely love to try it.

EGGLESS LOW FAT GARLIC MAYONNAISE




Serves: 5-6
Time: 10 mins

Ingredients 

1 cup cottage cheese (soft creamy paneer) 
1/2 cup fresh thick yoghurt,curd ( low fat can be used)
1 tsp corn flour
1/2 tsp white pepper( I used black pepper) 
2 tsp garlic powder ( u can go with fresh Garlic cloves too)
Salt to taste

Method:

Add all the above ingredients in a mixer jar and blend till it become creamy batter like.
Then put it in a microwave safe bowl n cook for 2-3 min stirring every 30 sec to avoid lump formation and even texture till it acquire the consistency of mayonnaise. 
If u find it little thinner then don't worry it will thicken after cooling.




Always use soft cheese otherwise u will get grainy texture.
For different flavor u can add 1/2 cup of chilli sauce to it to make chilli mayonnaise.
You can add different herbs like oregano, thyme, basil etc to get herbed mayonnaise 
It's so quick n easy recipe that u can make daily n enjoy different flavours without any guilt.
It can be kept in tight covered jar for 1 week to 10 days in refrigerator .
It goes well with any snacks as dip or use in burgers, sandwich etc.

LOW CALORIE CHICKEN TIKKA MASALA

Today I have recipe of a very popular chicken dish among chicken lovers. Though this is usually very rich and calorie loaded dish which we get in maximum hotels and dhabas , but I tried to give it a healthy touch by adding almonds and omitting cream , even then it came out so tempting and finger licking that you can't say it's low calorie and something is missing from traditional one. And the overnight marination of chicken gave it so tender and juicy texture that you can't deny for more and more pieces. Even my daughter, who is not very fond of chicken pieces, took more pieces and saying it's the best chicken I had ever.

LOW CALORIE CHICKEN TIKKA MASALA



Serves: 3-4
Time: 1:30 hr 

Ingredients 

1/2 kg skinless chicken breast, cubed
1 cup colored capsicum, cubed
2 medium onions, cubed

For marination:
3/4cup thick yoghurt( curd)
1 1/2 tbsp corn flour 
1/2 tsp cumin powder
1/2 tsp tandoori masala 
1/2 tsp black pepper powder 
1/2 tsp chaat masala powder
1/4 tsp garam masala
1/2 tsp red chilli powder 
1/2 tsp ginger garlic paste 
1/2 tsp chicken masala
1/4 tsp turmeric powder 
1 tsp oil
1 pinch orange red edible color(optional)
Salt to taste

For gravy:
1 pinch orange red color 
1 tbsp kasoori methi
2/3 cup thick yoghurt, beaten
1 1/2 tsp tandoori masala
1/2 tsp chicken masala
1/4 tsp turmeric powder 
1 tsp Kashmiri red chilli powder 
2 green chillies, broken in halves
1/2 tsp sugar( completely optional)
Salt to taste

For paste
15 almonds
4 cloves
4 green cardamom 
2 inch piece cinnamon 
10-12 black pepper corns
4 medium tomatoes 
2 medium onions, sliced
5-6 cloves garlic
1 inch piece ginger

Method:

First of all marinate cubed chicken,capsicum and onions in paste of marination section ingredients and keep in fridge for at least 4-5 hr, but for best result,keep it overnight.




Now boil or pressure cook all ingredients given under, for paste section, let it cool and make smooth paste in grinder. 




After marination is done, arrange chicken, capsicum and onions in skewer as per your choice and grill till it get nice tender,smoky and little charred from all sides. You can also do it on direct flame for more smoky effect.





 Your tender chicken tikka is ready to serve as starter, just sprinkle some chaat masala and squeeze little lime juice on it and serve.




Now to serve it in main dish lets start making its gravy. Heat oil in a wok , add prepared paste and broken green chillies, fry for 5 mins now add turmeric powder, chilli powder, chicken masala and tandoori masala. Fry till it starts leaving sides of the wok and makes lump. Add beaten curd ,add rest of marination, if any , stirring constantly to get smooth gravy.  Add pinch of colour mix well , cook for 2 mins .



Add water to adjust gravy consistency as per your like. Let it boil then add grilled chicken and veggies.
Add salt ,sugar and kasoori methi. Simmer for 5 more mins and done.



Chicken tikka masala is ready to serve.



Soak skewer in water for at least 1 hr to avoid its burning while grilling.
It didn't use sugar , but if you find your curry a bit sour then can add it to balance the sourness.
Add water generously as the curry will thicken after cooling.
Always use fresh yoghurt and nice ripen red tomatoes to get nice red color and less sour gravy.




Your smoky tempting and tender chicken tikka masala is ready to go well with naan, roti or any rice. It can be included in any party menu. So cook and get everyone's praise with this guilt free yummy side dish cum starter.

ZERO OIL MULTIGRAIN MUTHIA ( SAVORY SNACKS)

Hello everyone 
Today I have a very simple yet delicious no oil snacks recipe. With tea we always search for some snacks , may be it samosa , kachodi or any savory mixture but when it comes to calorie consciousness then we start missing these.  So here I have perfectly guilt free and filling snacks to go well with your coffee and tea without adding extra calories. I used multigrain instead of only gram flour to make it rather healthy and filling too. And also I used my left over rice in it so that it will also be consumed without any nakhare . Recipe is given below , hope you will like it.

ZERO OIL MULTIGRAIN MUTHIA



Serves: 3-4
Time: 20 mins

Ingredients 

1 1/2 cup cooked rice
1/4 cup each (bajra flour, jowar flour)
1/2 cup oats , grind 
1/2 cup gram flour( besan)
1/4 tsp cumin powder
1/4 tsp red chilli powder 
1/4 tsp garam masala
1/4 tsp black pepper powder
1/2 tsp turmeric powder 
1/2 tsp chaat masala 
1/4 tsp asafetida ( heeng)
1 pinch baking soda
1/2 cup green coriander leaves, finely chopped 
1/2 tsp ginger garlic paste 
2 tbsp yoghurt ( curd)
1 green chilli, finely chopped 
Salt to taste

Method:

Mix all ingredients together well. Now sprinkle some water and make a firm dough. Don't add much water at a time. Add little and try to make dough just to hold all ingredients together. Now make its tight thick log shapes and steam for 12-15 mins. For steaming, keep logs in a sieve and place it on a pot having boiling water and cover with lid , steam for mentioned time. Now let it cool for 5 mins then slice and serve with green chutney or sauce.Your guilt free snacks is ready in no time. Don't slice it immediately after cooking otherwise you will not get clean slices. If you don't want to add multigrain, then use only gram flour.



If you want some more zing in it then sprinkle little oil in a non stick pan, add some heeng, mustard seeds, green chillies and curry leaves , let them crackle then add sliced muthiyas and saute for 4-5 mins. Sprinkle some chaat masala on it and serve hot. In both ways it's a healthy and filling yummy snacks goes well with tea and coffee.
