HEALTHY MANGO AND KIWI POPSICLE , WITHOUT ADDITIVES

Hello everyone

Today I have summer cooler easy peasy fruit Popsicle recipe. As summer started and everyone need some chilling cooler to beat the heat.
With hot summer the first pleasing name comes to mind is the king of fruits MANGO. I think no one can say 'no' to this yummy droolsome fruit, everyone from kids to elders love it, Even my mom is a big fan of mangoes. So thought to try my hands on mango popsicles but also added some kiwi to make it more fruity and attractive to kids , and used just two ingredients with no compromise in taste. It is so easy, no cook , no fuss recipe that can be prepared in minutes. And the end result is so tempting and yummilicious that you can't resist yourself asking for another one.  Even my fussy eater kids loved it.
Step wise recipe is given and hope you all will like this summer cooler.

HEALTHY MANGO AND KIWI POPSICLE, WITHOUT ADDITIVES




Yield: 10-12 ice creams, depend on size of mold
Time: 10 mins ( leaving freezing time)


Ingredients 

2 big size , nice ripe mangoes, roughly chopped
3 kiwis, peeled and roughly chopped 
Sugar to taste ( depend on sweetness of mango), I used 4 tbsp for mango and 3 tbsp for kiwi

Method:

Take mango , sugar and some water, if needed ,in a blender and churn to nice thick smooth paste.

Similarly make paste of kiwi, sugar and some water.
 
** Don't add too much water as we want nice thick paste not runny liquid. Too much of water may lead to excess ice crystals in your final outcome.


Now pour the prepared mango paste in Ice cream molds till half filled and keep in freezer for 10-15 mins. Now fill another half with kiwi paste and place the mold sticks . Now again keep it in freezer overnight or minimum 6-7 hrs.



Now demold Popsicles  by putting mold under running water. Serve and see the happiness on faces , without any guilt.



* Your prepared paste should be thick like idli batter. 

*You can also use canned mango pulp, nearly 1 cup.

* Adjust sweetness as per your taste.



* You can also add some fruit chunks if your kids like, as mine are so fussy to have fruit chunks in their Popsicle so I avoided. 



* You can also use any other fruit of your choice to make it more personalized to your Taste buds

NO CREAM, JUST THREE INGREDIENTS NO COOK MANGO ICECREAM

So thought to try my hands on mango ice cream without using cream but with easily available handy ingredients with no compromise in taste. It is so easy, no cook , no fuss recipe that can be prepared in minutes. And the end result is so tempting and yummilicious that you can't resist yourself asking for another one.  Even my fussy eater kids loved it.

Ingredients

1 cup milk powder
Sugar to taste ( depend on sweetness of mango), I used left over syrup of rasgulla 

Method:

Take all ingredients in a blender and churn to nice thick smooth paste.


 I added little yellow colour and mango essence to my mango paste as my mango was just pale yellow.
** This step is completely optional, if you have nice orangish or yellow mango then no need to add color. 


Now pour the prepared paste in Ice cream molds and keep in freezer overnight or atleast 6-7 hrs.


Now demold icecream by putting mold under running water. Serve and see the happiness on faces , without any guilt.


Your prepared paste should be thick like idli batter. As I used little sugar syrup in my batter so very small ice crystals were formed after two days of freezing. 
You can also use canned mango pulp, nearly 2 cup.


You can also add condensed milk instead of milk powder and sugar to enjoy more rich flavor.

OATS MANGO KULFI WITHOUT CREAM

Hello everyone
Who don't like kulfi or ice creams, but if it's made of oats then? Wow.... Yes , it's absolute taste with health. I always tried to skip Ice creams and kulfis due to creams added in it but now no issues. An idea strikes me few days back that if I can use oats in my pasta to make it creamy and saucy then why not give it a try in some sweet treat. Suddenly my kid demanded ice cream , so thought to try this in kulfi first and the result was awesome. My fussy eater too loved it , what else is needed. Happy kids, satisfied mom, that's all😊😊. It's very easy, minimum cooking kulfi with seasonal fruit, mango. Recipe is given below, hope it comes up to your expectations.

OATS MANGO KULFI WITHOUT CREAM




Yield: 1- 1 1/4 lt 
Time: 20 mins ( freezing time excluded)

Ingredients 

3/4 cup oats
2 1/2 cup milk
2 1/2- 3 cup mango puree  ( pulp of four medium sized ripe mangoes)
1 tin condensed milk ( 395gms)
Chopped dry fruits ( optional)
1 tsp mango essence ( optional)

Method :

First of all soak oats in milk for 20-30 mins. Then cook it till nicely done. Let it cool then in a grinder make its smooth and creamy puree. Use more milk if needed, as the puree should be thick creamy but of pouring consistency.



Now add mango puree , condensed milk, dry fruits( I skipped) and essence to it. Mix well and fill in kulfi molds .



 Freeze for at least 7-8 hrs or overnight. Your yummy kulfi is ready to serve.



If your mangoes are not so sweet then add some sugar as per your taste. Adding dry fruits is optional, but I will recommend you to add as it will hide that little taste of oats in kulfi.
If you don't want to add mango in your kulfi then substitute it with equal amount of thickened milk of same consistency and lots of dry fruits.



Use kulfi mold is also recommended, as freezing in big bowl may lead to formation of ice crystals in it. Then you should churn it again after half frozen to avoid ice crystals .
I used M&M 's tubes to make kulfi as don't have kulfi molds, so you can also use your jugaad.😊
Your simple, easy and healthy kulfi is ready for health conscious kulfi lovers and fussy eaters too.

LOW FAT VEG MANGO CHEESE CAKE

Hello everyone
In summer, there are mangoes and mangoes everywhere . Everyone is just mad on mangoes these days , making mango cakes, mango ice creams, mango pudding, mango jelly and many more in the row. I am also one of them😊 So after trying my hands on mango jelly and ice cream , now I thought of trying mango cheese cake for first time. But its richness of calories made me always hesitate to try , though I am too fond of trying healthy and guilt free cooking, so came up with a healthy substitute of fatty cheese and cream used in this cake. Accidentally or you can say luckily my 1 1/2 lt of milk got cuddled and hence I got a golden chance for my experiment. As I was not so sure for the perfect end result so missed to click all steps pics but to my surprise, the final outcome is just wow and of course a guilt free dessert.
Recipe is given below, hope you all will definitely like it.

LOW FAT VEG MANGO CHEESE CAKE



Ingredients 

1 1/2 lt milk 
1 tbsp lemon juice or vinegar 
1 1/3 cup mango puree 
2 tbsp sugar, you can add more
5 gm agar agar( China grass)
3/4 cup water
12-15 any sweet biscuit, I used 4 belvita biscuits 
1 tsp ghee or butter

Method:

First of all boil milk, then add lemon juice or vinegar , little by little till it get cuddle. Then strain it in a muslin or any fine cotton cloth. Wash it under tap water to remove sourness of vinegar or lemon from cheese. Then squeeze it well and hang some where for at least 1 hr to drain excess water in it. Now your cheese is ready to use.



Soak agar agar strips in water for at least 20 mins. Then take 3/4 cup of water in a pan, add soaked agar agar and boil. After boiling, lower the flame and let it simmer till agar agar get completely dissolved in water. In meanwhile take cheese in mixer and churn till smooth, both not too much. Now add 1 cup mango pulp and sugar in it and churn again for 2-3 pulses only. Now pour it in a bowl.



Now make powder of biscuits in a mixer and add ghee or butter in it. Take a greased pan of your choice, spread this biscuit ghee mixture in it evenly and press with a spatula to get a firm base.



Now in cheese mango mixture add agar agar liquid, little more than half the quantity. Mix well and pour it on biscuit base evenly. Tap the pan to remove any air bubble formed .  Keep the pan in freezer for 10 mins. Now take 1/3 cup of mango puree and add rest of agar agar liquid and mix well. Now take out the pan from freezer and pour this mango puree all over it evenly and tap the pan to get smooth surface. Now keep the pan in refrigerator overnight. For demolding , run a clean knife along its sides so that it leave the edges of pan then carefully invert it on a chilled plate and then invert it once again on serving plate, and done. But will suggest to either use spring form mold or use butter paper in base to make it easier to demold as mine got little deformed in inverting twice.



 Your mildly sweet guilt free veg mango cheese cake is ready to serve.
Be careful with agar agar, as it can set at room temp too. So when we have to wait for next step then keep agar agar mixture bowl in boiling hot water to avoid its jelly formation. If you want good sweet dessert then you can add more sugar to cheese mixture and also some sugar can be added in upper mango mixture too.

NO CREAM MANGO ICE-CREAM

So thought to try my hands on mango ice cream without using creams and artificial colors or flavours but with easily available handy ingredients with no compromise in taste. And the end result is so tempting and yummilicious that you can't resist yourself asking for another scoop. Even my fussy eater kids loved it.
Step wise recipe is given and hope you all will like this summer cooler.

NO CREAM MANGO ICE CREAM



Ingredients 

1 lt milk
1/2 tin condensed milk
1 1/2 cup mango pulp
4 tbsp sugar
3 tbsp corn flour 
1/3 cup water

Method:

Heat milk in a thick bottom pan till it become nearly half. Stir occasionally to avoid burning at bottom.



Now add sugar, condensed milk and corn flour (dissolved in 1/3 cup of water) to it. Stir continuously as it thickens very fast and stick to bottom. When it acquire the consistency of dosa batter thickness, turn off the flame and let it cool.



When it become warm then add mango pulp to it and mix well.



Now pour it in an air tight container and keep it in freezer at high for 4-5 hrs.
To get more smoother ice cream , take it out from freezer after 1 hr and churn in a mixer for few pulses. Again pour in same container and freeze for 4 hrs. It will yield nearly 1 lt of ice cream.

MANGO AND STRAWBERRY VEG JELLY

Hello everyone 

Today I am here with kids favorite jelly recipe. 
My kids are too fond of jellies and can have any time. They always insist to buy , so I thought why not to give it a try at home also. I always try to avoid non veg addition to my daily cooking so tried my hands on agar agar for this recipe. As summer is knocking and lovely aromatic mangoes are in season and also had some strawberry syrup in hand so made these irresistible mango and strawberry veg jellies.
This is so easy and quick recipe that you all will definitely going to love it and surely will try also.


MANGO AND STRAWBERRY VEG JELLY


Serves:5-6
Time: 30 mins ( leaving chilling time)


Ingredients

Lt water
gm agar agar strings ( China grass )
3-4 tbsp sugar (as per taste)
tbsp strawberry syrup
1/4 cup mango pulp


Method:

Soak agar agar in 1 cup water for 20- 30 mins.





 Heat 1 Lt water in pan and add squeezed agar agar in itCook till agar agar get completely 
dissolved in itNow add sugar in it , cook till sugar dissolve and turn off the flame.





Let
 it cool a little ( nearly 5 minsthen divide it in two equal partsNow add strawberry syrup to one and mango pulp to other part and mix well





Pour in desired molds and let it set for 15 - 20 mins.




It
 gets set at room temp itself but to fasten the process you can keep it in fridge also.
It tastes better when served chill.


**If
 you are willing to make double layer jelly then pour one flavor in mold and let it set a little then 
pour second flavor .








**Be careful with your jelly mixture as it will  set at room temp also , so to keep it in liquid form make sure to keep it warm.

**When
 one layer is setting , keep the left one mixture in hot water bowl 
to avoid setting it in jelly form .

*You
 can make jelly of any fruit juice of your choicein the same way.

*
You can add more sugar as per your taste . I kept it mildly sweet.

Your so easy yet delicious veg jelly is ready to serve to your lil munchkinsI am sure 
they will love it. It can be served as party snack for kids, in tiffin or in evening snack.
