GOLGAPPE WITHOUT MAIDA

Hello everyone 

Today I have recipe of the most favorite street food of we Indians, specially ladies. Golgappe/ puchka/ pani puri/ batase etc are many names of it in different regions of India but the taste is always the same awesome spicy, tangy super delicious everywhere. You can see its vendors everywhere on streets with huge crowd for golgappe and chaats. But some times we try to avoid it having outside due to hygiene purpose. So why not give it a try at home and relish on this super tempting mouthwatering street food in hygienic way. I also avoided adding all purpose flour to it, making it more healthy.
Stepwise recipe is given below, hope you will definitely fall in love with it.

GOLGAPPE WITHOUT MAIDA



Yield: 40-50 pooris
Time: 1 hr

Ingredients 

For pooris :

1 cup semolina(sooji)
1/4 cup whole wheat flour
1/4 tsp salt
1/8 or 2 pinches of baking soda
Warm (nearly hot but not boiling)water to knead dough


For mashed potatoes :

3-4 medium potatoes, boiled and mashed
1/4 tsp chaat masala powder
1/4 tsp chilli powder
1/4 tsp roasted cumin powder
1 medium onion, finely chopped ( completely optional)
2 tbsp green coriander leaves , finely chopped ( optional)
1 green chili, finely chopped 
Salt to taste


For spicy tangy water:

1 lt water
2 tbsp tamarind pulp
1/2 cup coriander leaves
1/2 cup mint leaves
3-4 green chilies 
1/4 tsp roasted cumin seeds
1/4 tsp black pepper powder
1/2 tsp black salt
1 tbsp lemon juice
2 tbsp boondi ( optional)
Salt to taste


Method:

For pooris:

Combine all ingredients together and knead a tight dough with help of warm water.

Dough should be tighter than poori dough but it must be easy to roll to a thin chapatti without cracks.

Now cover the dough with damp cloth and let it rest for nearly half an hour.



Then take a big lemon size ball of dough and roll it into a thin chapatti . It should be thinner than roti but should not be transparent. Always roll it evenly to get nicely puffed pooris. If you roll thick then pooris will become chewy on cooling and extremely thin pooris will not puff perfectly. So try to roll pooris perfect.

Now cut round pooris with 2- 2 1/4 inch diameter cookie cutter or any bottle cap.



Cover the pooris with damp cloth till frying to avoid drying. Your must cover remaining dough also while making one batch.

Heat oil in a wok. When it become really very hot then fry pooris in it 4-5 at a time . puff them with help of laddle and them Sim flame and fry till they become golden from both sides. Don't add more than 4-5  pooris at a time other wise oil will become cool and pooris will not puff properly.


Be quick in flipping pooris while frying to avoid burning as these are thin so burn very quick.
Cool them on tissue paper or kitchen napkin and then store in airtight container.



Make sure your oil must be too hot other wise pooris will not puff properly and become soft afterwards.



For mashed potatoes:

Mix all the ingredients given under mashed potatoes and keep aside for later use. 


You can increase or decrease spices as per your taste.



Spicy tangy water:

First of all make puree of coriander leaves, mint leaves, tamarind pulp, green chilies and some salt. Now mix all spices , lemon juice and puree in water, adjust salt . Increase or decrease spices as per your taste. 


Add boondi ( optional) and serve with golgappe.

PALAK PANEER

Hello everyone 

We all know that spinach is good source of iron and other minerals but seriously, how many of us like this veggie to include in our diet. Many people , specially kids don't like this healthy veggie and increase the tension of their moms that how to feed them. But one more fact is whatever you hate this but it's combination with paneer makes it eligible to be included in delicious and must have dishes. So why not try this combo to make mummy and tummy , both happy. It's very easy to cook yet super tempting dish to serve not only in lunch or dinner but in party menu too. I adopted this recipe from raks kitchen but executed according to self taste and ease. 
Step wise recipe is given below, hope you will love to try and relish on it.

PALAK PANEER





Serves: 4-5
Time:  30 mins

Ingredients 

2 bunches of spinach, washed and hard stems removed ( nearly 5-6 cup leaves)
2 cup cottage cheese ( paneer)
1/2 cup milk
4-5 green chilies( or as per taste)
3 medium onions, finely chopped 
2 big tomatoes, finely chopped 
1 tsp coriander powder
1/4 tsp turmeric powder 
1/2 tsp kitchen King masala
1/2 tsp kasoori methi
Salt to taste
Oil

To roast and grind:

2 green cardamom 
2 cloves
1 inch cinnamon stick
1 tsp cumin seeds
1 tsp black pepper corn



Method:

First of all blanch spinach i.e. Boil sufficient water in a big pot add 1/2 tsp sugar in it and add spinach leaves in it and leave for 2-3 mins then strain in a sieve and wash thoroughly under tap water to  retain its green color. 


Now make puree of it along with green chilies and keep aside.


Heat 1/2 tsp oil in a wok and add all spices except cumin seeds as it burns quickly , mentioned under to roast and grind section. Saute till they become aromatic then add cumin seed and saute for few seconds and drain on a kitchen towel or tissue paper to absorb any extra oil. Let it cool and grind to coarse powder, I used my hand mortar . Now cover it and keep aside for later use, to retain its flavor and aroma.



Now heat some oil in the wok and add chopped onions. 


Fry till little golden then add turmeric powder, kitchen King masala and coriander powder, saute for a minute and add chopped tomatoes.
 Let them cook till nice mushy and starts leaving edges of the wok. Now add pureed spinach and cook till its raw smell goes off. 


Now add milk , stirring constantly to avoid forming lumps. Add water to adjust its consistency according to your preference. Add salt and let it boil. 


Now add paneer cubes and ground spices,let it simmer for another 5 mins.


 Finally add kasoori methi, mix well and switch off the flame. 


Your super yum healthy side dish is reddy to serve with roti, rice, naan or paratha. 


Never boil green leafy veggies for long as it kills its nutrients and also makes it dull.
You can also add cream in it to make it more creamy and rich.

HOW TO MAKE PERFECT POPCORN AT HOME

Hello everyone

Can you imagine your movie without popcorn? Many will answer no , but those are full of extra calories and for health conscious people it becomes a nightmare to have popcorn while watching movies. Even kids demand this delectable crunchy munchy snacks whenever they see it, so why not prepare it at home without any special gadget and with your permissible amount of calories and flavours too. It's so easy to make it and in no time. In less than five mins , from start to served, it gets ready. 
Recipe is given below , so for what you are waiting ,let's start. 

HOW TO MAKE POPCORN AT HOME


Serves: 2-3
Time: < 5 mins

Ingredients 

1/3 cup dry corn kernels ( sufficient for 3 lt pressure cooker)
2-3 tsp refined oil/ butter
Salt to taste
Chaat masala ( optional)

Method:

Heat pressure cooker at high flame, add corn kernels, oil/ butter, salt and chaat masala. Stir it to mix everything properly. 


Lower the flame to medium and close the lid without vent. Now let it cook till you hear pop sound , stirring your pressure cooker every 10- 20 secs to avoid burning  and even popping of your popcorn. When you are not hearing pop sound for 10 seconds then immediately turn off the flame , open lid and transfer pop corns in a wide vessel or sieve to avoid sogginess. 


Your crispy crunchy snacks is ready to serve.  


Be alert while making popcorn as if you let it sit for long in the pressure cooker after popping, then it will become soft instead of crunchy. So always be quick in transferring it to wide bowl after done. Don't forget to stir your pressure cooker in between popping process to get even popped pop corn without burning. If you are wishing to pack it for travel then let it cool completely then pack to restore its crunchiness.
You can add other flavours too as per your choice or can add more butter to get buttery pop corns.
You can also prepare it in any heavy bottom wok or deep heavy pan with lid. So prepare this quickest yet everyone's favorite snacks at home and enjoy any time .

SIMPLE AND QUICK EGG CURRY

Hello everyone 

Though I am not a very big fan of non veg but always liked eggs and could rely on it for each meal . Unfortunately few years ago I developed allergy to it so left having it but my son like omelette too much and hubby too likes egg stuffs. So for them I used to cook these. Omelette is generally cooked every day at my place but other varieties are rarely cooked because of me. So thought why to torture them for my problems and planned to serve them some thing different than daily routine and quick too , in order to save some time for mine preparation too. This is so quick yet yummy curry recipe you can prepare in jiffy. 
Recipe is given below, do try and let me know too how's it turned out for you.

SIMPLE AND QUICK EGG CURRY



Serves: 2-3
Time: 25-30 mins

Ingredients 

4-6 eggs
3-4 medium onions, finely chopped
3-4 green chilies, broken in halves 
2-3 medium tomatoes, finely chopped
1 tsp ginger garlic paste
1/2 tsp turmeric powder 
2 tsp chicken or egg curry masala powder
1/4 tsp garam masala powder 
1/2 tsp Kashmiri red chilli powder
1/2 tsp cumin seeds
1/4 tsp asafetida 
1/4 cup green coriander leaves, finely chopped 
Salt to taste
Oil

For tempering

1/2 inch cinnamon stick
2 green cardamom
2 cloves

Method:

First of all hard boil eggs in salty water , let it cool and peel it. Now heat some oil in a pan and fry eggs till golden brown on all sides. Keep aside for later use.


Now heat oil in a wok and add asafetida and cumin seeds. Let them crackle, add chopped onions and chillies, fry till light golden. 


Now add ginger garlic paste and saute for 2 mins. Add turmeric, Kashmiri red chilli powder, garam masala  and chicken/ egg curry powder, saute for a minute . 


add chopped tomatoes with some salt. Let it cook till tomatoes become mushy and spices are well cooked. Now switch off the flame and let it cool a little. 


Now make its puree using little water. Again heat little oil in the same wok and add tempering spices, fry till it become aromatic. Now add prepared puree and some water according to your preference of gravy consistency. 


Adjust salt and let it boil. Now either pour this on eggs or put eggs in curry and garnish with coriander leaves. 


Your delicious egg curry is ready to be served with roti, naan or rice. 


You can also poke boiled eggs  with knife or skewer to get curry infused in it. Or cut eggs in half and pour curry over it while serving to make it more presentable.

PANEER SANDWICH

Hello everyone

Morning is the time when everyone is in rush to go to school/ office etc and at that time the most important thing that makes us fueled whole day is a healthy breakfast. But now a days everyone is so busy that couldn't manage to prepare a full meal that early. So why not prepare some thing which can be prepared in no time and is healthy cum yummy too. Sandwich is the first name comes to mind when we think of breakfast but instead of loading it with lots of butter, mayonnaise or potatoes , let's have some healthy and nutritious option. Cottage cheese( paneer) is full of protein and calcium , so today I am going to share paneer sandwich, which is so quick to prepare and delicious too.
Recipe is given below, do try and let me know too how's it turned out for you.

PANEER SANDWICH



Serves: 4-5
Time : 15-20 mins

Ingredients 

11/2 cup cottage cheese (paneer), crumbled 
1/2 cup colored capsicum, finely chopped 
1 spring onion, finely chopped 
2 tbsp chopped green coriander leaves 
1 green chilli,finely chopped 
1/2tsp black pepper powder 
1/4 tsp chaat masala
1 tsp lime juice
Salt to taste
Chilli/tomato sauce/ any chutney
Whole meal sandwich bread
Oil

Method:

Mix all ingredients together except bread and oil. Use lime juice and chilli as per your taste.


Keep aside.



Now take one bread slice, apply some chilli or tomato sauce or any chutney of your choice. Spread two table spoon of paneer mixture all ove it evenly. Now place another bread slice over it. Spread some oil on tawa and roast your sandwich from both sides till crisp. Always use medium to low flame for making sandwich, otherwise your bread will burn before getting crisp. Cut diagonally to get nice triangular shape. Or grill it in sandwich maker. 
 Your crisp healthy cum delicious breakfast is ready to serve with a cup of tea. 


Enjoy this easy peasy dish with family or pack for your lunch box, it will never disappoint you. Using whole meal bread is a healthier option and let you fill for long time as it has more fibers. If you don't get it then go for your regular bread. Mix and match ingredients according to your taste and available and enjoy.

CHILLI NUTRELLA ( SOYA CHUNKS)

Hello everyone

Now a days everyone is just mad over Chinese cuisine, but as we are Indians and love to give every thing a Desi touch, today i am having a very tempting and quick Indo Chinese recipe. You will definitely fall in love with this delicious combination of Indian plus Chinese cuisine. As we all know soya chunks( nutrella) is full of protein but many people don't like it. So to feed them this nutritious stuff try this delectable recipe and I bet you will be surprised to see them asking for more, as I was when my lil one asked😊. You can serve it either in evening snacks or as side dish for roti/ paratha/ poori.
Step wise recipe is given below, do try and let me know too, how's it turned out for you😊

CHILLI NUTRELLA 




Serves: 3-4
Time : 20 mins

Ingredients 

1 1/2 cup soya chunks ( nutrella)
1 cup mixed colored capsicum, sliced
2 spring onions, cut in 1 inch long pieces
1 medium onion, thickly sliced 
1 medium onion, finely chopped
1 tbsp finely chopped garlic
1-2 green chilies, finely chopped
1 tbsp + 1 tsp corn flour
2 +2 tsp chilli garlic sauce
2 tsp soya sauce
1/2 +1/2 tsp black pepper powder
1 tsp vinegar
Salt to taste
Oil





Method:

First of all soak soya chunks in hot water till it doubles in size. Now squeeze it and wash with tap water, twice or thrice , squeezing every time to get rid of its smell. Now add 1 tbsp corn flour, 2 tsp chilli garlic sauce, 1/2 tsp black pepper powder and some salt, mix well and keep aside for 10-15 mins for marination.



Now heat 1 tbsp oil in a non stick wok and saute soya chunks on medium heat stirring occasionally till they become nice golden and crisp. Keep aside for later use. 


Now heat 2 tsp oil in the same wok and add chopped garlic and chilies, let it be golden then add chopped onions .


Fry till onions become little golden. Add capsicum, sliced onions and spring onion, saute for 2-3 mins on medium flame.


 Now mix 1 tsp corn flour, 1/2 tsp black pepper powder, 2 tsp chilli garlic sauce, soya sauce and vinegar in 1/4 cup water( you can adjust these as per your taste preference) . Add this to wok slowly, stirring constantly .


 Let it boil and add salt and fried soya chunks to it. Mix well and cook for another 2 mins , till every thing is well coated with sauce.


 Now switch off the flame and garnish with spring onions. 



If serving for tea time snacks then serve immediately to have it crunchy and crispy. Otherwise serve with roti / paratha/ poori in lunch or dinner. It can be a perfect lunch box option too, for you and your kids. 



It's very simple yet delicious treat that can be prepared in jiffy , even if you have some unexpected guest at your home and want to serve them something special, delicious yet quick.
