MINTY MASALA CHHAS

Hello everyone 

Now a days weather is so hot and humid that we need some super cool drink to quench our thirst . But generally people try to grab some cold drink which is never being a right choice for their health. 
So I thought why not to share some thing thirst quenching as well healthy too. Today I am having a cool refreshing drink recipe with freshness of mint and cooling effect of yogurt. This is not only healthy but quick too. You can prepare it in just five minutes or less and please everyone in a healthy way.
Chaas is a well known drink to everyone and nearly prepared in every household in slight different way.
I just added little more refreshing flavour to our regular drink to make it more appealing and satisfying.

Recipe is given below. Do try and don't forget to share your experience with me.

MINTY MASALA CHAAS




Serves: 3-4
Time: 5 mins

Ingredients 

1 1/2 cup thick fresh yogurt ( curd)
1/2 tsp roasted cumin powder
Handful fresh mint leaves
1/4 tsp black salt
1/4 +tsp chaat masala( as per taste)
1/2 tsp sugar ( optional)
Salt to taste
Water as needed

Method:

Add 1/4 - 1/2 cup yogurt and rest of ingredients except water in a blender and blend till mint leaves are nicely crushed and incorporated with yogurt.

** Never add all the yogurt at a time otherwise it will turn watery in few pulses and your mint will remain as it is, in big leafy chunks.

Now add rest of yogurt and desired water as per your choice of thickness consistency. And blend again. Adjust salt and other ingredients as per your taste and pour in individual glasses , garnish with mint leaves and serve.



You can also chill before serving for more flavourful drink.


This is so easy drink you can prepare in minutes even when you have unexpected guests at home.


This can also be served as post heavy lunch/ dinner drink as it is best digestive drink you can have ever.

MANGO SHAKE

Hello everyone

Chilled drinks and smoothies are in demand now a days. It not only provide relief from this scorching heat but also soothes our senses. I make various varieties of smoothies and shakes but my lil fussy eater refuses every trial of mine. But this one is his favorite, so with welcome of summer I get this super yum King of fruits, mango to please my kid . During summer, it is followed just like ritual to prepare mango shake on daily basis, just not because it's super delicious and soothing but also because of my kids interest. At least he liked this, is a big victory of mine as a mom😁😁. Although this is not very extraordinary recipe even then I am sharing my way of preparing this super simple and super super delicious drink .
Recipe is given below, do try and don't forget to let me know your experience.

MANGO SHAKE




Serves: 4 
Time: 10 mins

Ingredients 

1 big size ripe mango ( preferably alphanso or badami), peeled and cut in chunks
3 1/2 glass milk( chilled)
2 tbsp sugar ( depend on sweetness of mango)
Some ice cubes to serve ( I skipped)
Some chopped dryfruits and rose petals ( for garnishing, I skipped as my kid dislike 🙄)

Method:

Put mango chunks, sugar and some milk or water in mixer and churn to make nice smooth puree. 


* Don't put all the ingredients together in mixer otherwise you will not get nice smooth and creamy shake. 


Now add all the milk and churn again for 1-2 minute, to get nice frothy and thick shake. 

Now pour in individual glasses , put some ice cubes and garnish with dryfruits and rose petals.
Serve chilled and see satisfaction on their faces. 




* If you don't want to use more milk then can use 50:50 water and milk or also only water. But then taste may differ.


* Adjust sugar as per your taste as I kept mild.



* Consume within few hours of preparation as due to little tartness in mango , milk may cuddle if kept for long.


* If planning to store for a day then add water instead of milk.

MANGO AND DRIED CRANBERRY EGGLESS CAKE

Hello everyone

Who don't like cakes..... It a very silly question for sweet lovers as the answer is well known, of course die for cake. And if it's summer then what else is better than a hogging on mangoes. Nearly everyone love mangoes ,So Today I have a seasonal fruit cake recipe full of goodness of chapatti flour, mango and cranberries ,what else you want 😊. It's so soft and moist that you will definitely ask for another serving , I can bet. 
Stepwise Recipe is given below, hope you will like and definitely give it a try.

MANGO AND DRIED CRANBERRY EGGLESS CAKE




Serves: 5-6
Time: 50 mins

Ingredients 

2 cup all purpose flour/ chapatti flour
1 3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 1/2 cup mango puree
1/4-1/2 cup water
1/4 + 2 tbsp oil
1/4 cup dried cranberries
3/4 cup sugar, I used less ( or depend on sweetness of mango too)
2 tsp vanilla essence
1 tsp mango essence ( optional)
1/4 tsp yellow food color( optional, if your mangoes are not enough yellow)


Method:

First of all grease a baking pan and dust it with some flour, keep it aside.



Mix well flour, baking soda, baking powder, and salt together, then add dried cranberries and again mix, so that cranberries do not sink in bottom. keep it aside for later use.




Now take mango puree, sugar, oil , vanilla essence, mango essence, food colour and whisk till nice fluffy and sugar is melted.




Add flour mixture in 2-3 batches , add 1/4 cup water at a time and fold it to make a lump less smooth batter. 



Add water as per need to get idli batter like consistency. 

* If you are using all purpose flour then less water is needed but for whole wheat flour or chapatti flour , much water is needed. I used 1/2 cup water.

Pour in greased baking pan lined with butter paper. Tap to release any air bubble formed.





 Bake in a preheated oven at 180degree C for 40-50mins, or till tooth pick inserted in it comes out clean. Mine took exact 45 mins, so keep an eye on it after 35mins as different oven take different time. 



*Time also depends on baking pans, size and shape.

Let it cool for 5 mins then invert on a wire rack.

 Let it cool completely before slicing, to get neat slices.





Your super yummy and healthy cake slices are ready to go with your cup of tea.



Enjoy these scrumptious sweet treat any time. It's good for kids tiffin and mid meal hunger sprang.





*You can use any any dry fruits of your choice. 



*You can increase or decrease the quantity of sugar as per your taste and sweetness of mangoes.



*You can also use any shape of baking pan, I used loaf pan,but then baking time may change, so be cautious while baking and keep checking in between.

HEALTHY MANGO AND KIWI POPSICLE , WITHOUT ADDITIVES

Hello everyone

Today I have summer cooler easy peasy fruit Popsicle recipe. As summer started and everyone need some chilling cooler to beat the heat.
With hot summer the first pleasing name comes to mind is the king of fruits MANGO. I think no one can say 'no' to this yummy droolsome fruit, everyone from kids to elders love it, Even my mom is a big fan of mangoes. So thought to try my hands on mango popsicles but also added some kiwi to make it more fruity and attractive to kids , and used just two ingredients with no compromise in taste. It is so easy, no cook , no fuss recipe that can be prepared in minutes. And the end result is so tempting and yummilicious that you can't resist yourself asking for another one.  Even my fussy eater kids loved it.
Step wise recipe is given and hope you all will like this summer cooler.

HEALTHY MANGO AND KIWI POPSICLE, WITHOUT ADDITIVES




Yield: 10-12 ice creams, depend on size of mold
Time: 10 mins ( leaving freezing time)


Ingredients 

2 big size , nice ripe mangoes, roughly chopped
3 kiwis, peeled and roughly chopped 
Sugar to taste ( depend on sweetness of mango), I used 4 tbsp for mango and 3 tbsp for kiwi

Method:

Take mango , sugar and some water, if needed ,in a blender and churn to nice thick smooth paste.

Similarly make paste of kiwi, sugar and some water.
 
** Don't add too much water as we want nice thick paste not runny liquid. Too much of water may lead to excess ice crystals in your final outcome.


Now pour the prepared mango paste in Ice cream molds till half filled and keep in freezer for 10-15 mins. Now fill another half with kiwi paste and place the mold sticks . Now again keep it in freezer overnight or minimum 6-7 hrs.



Now demold Popsicles  by putting mold under running water. Serve and see the happiness on faces , without any guilt.



* Your prepared paste should be thick like idli batter. 

*You can also use canned mango pulp, nearly 1 cup.

* Adjust sweetness as per your taste.



* You can also add some fruit chunks if your kids like, as mine are so fussy to have fruit chunks in their Popsicle so I avoided. 



* You can also use any other fruit of your choice to make it more personalized to your Taste buds

KESAR BADAAM KULFI

Hello everyone

With holi , summer is also knocking at our door. And for kids it's season for more and more ice creams and chilled desserts. So my kids also demanded for the Desi ice cream, which we call kulfi with love and is much much better in flavor than any other ice cream. To make it even more healthier I added lots of almonds to it . Along with adding health , it also increases kulfi's flavor to many folds. So for this holi , prepare this super yum and simple kulfi and please your guests in chilled way. 
Step wise recipe is given below, do try and don't forget to tell how's it turned out for you😊

KESAR BADAAM KULFI




Serves: 14-15 ( depend on mold size)
Time: 25 mins ( leaving freezing time)

Ingredients 

1 Lt milk
1/2 tin condensed milk , nearly 200 ml
1/2 cup roasted almonds
10-12 threads of saffron, soaked in 2 tbsp milk
2 tbsp corn flour
2 tbsp Sugar or as per taste

Method:

First of all coarsly grind roasted almonds. Don't over grind as we want small chunks of almonds not powder. Keep aside for later use.


In a heavy bottom wok, boil milk till it remain 3/4th. Now add condensed milk and mix well. Let it boil again.


Now add corn flour in some warm milk and add in boiling milk , slowly and stirring constantly to avoid lump formation. Also add sugar and soaked saffron to it. Cook it stirring constantly till it become nice thick like custard . 


Always keep flame minimum after adding corn flour to avoid sticking to the bottom of pan. Now switch off the flame and add crushed almonds to it. Mix well and let it cool for 10-15 mins. 


Then pour in desired molds and keep in freezer for atleast 5-6 hrs or overnight. 


Then demold and serve chilled.



This delicious kulfi is loved by everyone, even my fussy eater loves to relish on it. I am so happy that In this way I can feed him some almonds. 



You can make any flavor of kulfi, this way. Substitute almonds with pista for pista kulfi, add any other dry fruit of your choice or add any other flavor of your choice.
