BAINGAN BHARTA ( MASHED SPICED BRINJALS )

Brinjals are generally not liked by many people , specially kids. But bhartas of any type just change the whole scenario, I found many , who hate brinjals but love to relish on bhartas , including my younger brother too. These are very common dish made in various parts of UP and Bihar in different ways. Some are merged with potatoes , some only brinjals and some also made of different other veggies too. I love it in any form and with any veggie. Specially this one is super delicious and easy . It's flavour leave you speechless if you are also a brinjal hater. 
Step wise recipe is given below, do try and let me know too how's it turned out for you.

BAINGAN BHARTA



Serves: 4-5
Time: 30 mins ( including roasting time)

Ingredients 

2-3 big round or oval brinjals( nearly 700gms)
4 medium onions ,finely chopped
4-5 green chilies , finely chopped
3- 4 medium tomatoes, finely chopped 
1 tsp ginger garlic paste
1/4 tsp asafetida ( heeng)
1/4 tsp turmeric powder
1 tsp garam masala powder
1/4 cup green coriander leaves, finely chopped 
Salt to taste
Oil

Method:

First of all wash and make a slit on brinjal and check. Now apply some oil on it all over, it helps to remove its skin easily. Now roast it in oven or directly on gas flame. I roasted mine in gas oven, it took 20 mins. When its stem can be easily removed by pulling, means your brinjal is nicely roasted.
Let it cool and remove its skin. Finely chop it or mash nicely.


Heat oil in a wok, add asafetida followed by onion , little salt and chilies. Let it cook on medium to low flame , stirring occasionally, till it become nice soft and transparent. 


Add ginger garlic paste and saute for 2 mins. Now add turmeric powder and garam masala powder, saute for a minute or till it becomes aromatic. 


Now add chopped tomatoes and some salt. Let it cook till tomatoes become mushy ,its raw smell goes off and starts leaving edges of the wok. Add chopped brinjal and fry for 4-5 mins.


 Adjust salt and add chopped coriander leaves. Mix well and switch off the flame. 


Your delicious side dish is ready to go with simple rice dal combo or roti.


Always choose brinjals carefully, as seeded ones are bitter and will spoil your dish. Light weight and spot less brinjals are best.
You can adjust chilies and tomatoes as per your taste.
