Hello everyone

Though i am not a fan of baking with eggs but sometimes, few things attract you to such an extent that couldn't stop yourself from doing that. One such tempting thing was meringue kisses for me. Whenever i see these beauties , they lure me to make them. So finally i overcame my baking without egg rule and tried these awesome gorgeous beauties . And to my surprise they came out almost perfect, not only in look but in texture too. I am jumping with joy to see them. My kids are super happy to have these and are proudly sharing with their friends too.
I am sharing my recipe here and hope you all will love to try it. It is so simple to try with minimum required ingredients.

Time: 2-3 hrs
Yield: 40-45 pieces, depending on size

2 egg whites ( at room temp)
1/2 cup fine granules sugar
1/2 tsp lemon juice
1 tsp vanilla essence
Gel food colours of your choice

First of all take eggwhites in a big bowl and beat at low to medium speed with a hand beater till it becomes little foamy. Add lemon juice and continue beating.

Add sugar little by little with your beater on. Now increase the speed of beater and beat till stiff peaks are formed.

Refer below pic for understanding stiff peak.

**Never over beat your egg mixture otherwise it will become runny .

Now take a big piping bag fitted with big round/star nozzel.

For colourful pattern , take little gel colours with toothpick and make vertical lines at some distance, inside the piping bag. Now fill it with prepared meringue.

On a baking tray lined with butter paper, pipe 1 1/2 - 2 inch size meringue kisses.

Now bake it in a preheated oven at 100°C for 1 hr 30 mins or till it can be easily lifted without sticking to the butter paper.

Let it cool inside the oven with door slightly open.

When it cooled down completely , store in an airtight jar.

*It will remain good at room temp for 3-4 days. You can keep it in refrigerator or freezer for longer life.

*If you want your meringue kisses of one single colour then can add colour while beating.

So bake these beauties and enjoy with your tea or give in kids snacks box. You can prepare a big batch and store in freezer and enjoy chilled crispies whenever you want.

Do try this simple yet delicious recipe and dont forget to share your experience with me. Your comments and suggestions meant a lot to me.

Happy cooking....

Hello everyone

Now a days, not only kids but elders too gone mad over burgers, sandwich, pizza etc loaded with high calorie , high fat mayonnaise. But by health point of view these are not good at all. So I thought why not try some low fat, low calorie version of mayonnaise to go with these traditional fast food items  to avoid some extra calories without punishing our taste buds. This can be also used on simple whole meal or brown bread as spread, if you are health conscious fellow but can't leave the love of having yummy finger licking mayonnaise. I came across this recipe accidentally, as I was trying to make some different dip for my snacks and to my surprise it came out as super smooth silky shiny mayonnaise.
Recipe is given below, hope you all will definitely love to try it.

Yield : Approx 1 cup
Time: 10 mins ( maximum)

1/2 cup soft paneer
1/2+ cup milk ( as per need)
2 tsp tomato paste
1 tsp red chilli hot sauce
1 tsp corn flour
1 tsp garlic powder ( you can also use fresh garlic pods)
1/4 + tsp black pepper powder ( as per taste)
1/4 tsp oregano
1/4 tsp chilli flakes ( optional)
Salt to taste

Add all the above ingredients in a mixer jar except chili flakes & oregano and blend till it become creamy batter like.

** It must be nice smooth and pouring consistency batter, neither too thick nor too runny. So if needed add some more milk to get right consistency.

Then put it in a microwave safe bowl and add oregano & chilli flakes, mix it well.

Now cook in microwave for 2-3 min stirring every 30 sec to avoid lump formation and even texture till it acquire the consistency of mayonnaise.

Mine took exact 3 mins.

Your silky smooth eggless mayonnaise is ready to serve with your choice of snacks.

** If you find it little thinner then don't worry it will thicken after cooling.

Always use soft cheese otherwise you will get grainy texture.

It's so quick and easy recipe that you can make daily and enjoy different flavours without any guilt.

** It can be kept in airtight covered jar for 1 week to 10 days in refrigerator .

* It goes well with any snacks as dip or use in burgers, sandwich etc.

** You can adjust ingredients as per your taste.

** If you want to make as gas stove then preferably use non stick pan and cook the blended mixture at low flame and stirring constantly to get lumpless smooth mayonnaise . Cook it till you get desired consistency.

Hello everyone

Who doesn't know my family's  love towards paneer dishes. Till now I told numerous times that everyone got it stuck in their minds😁. Specially paneer butter masala is my kids favorite paneer curry recipe. But due to use of excess butter and cream in it I avoid to make it like restaurant way. This is my second recipe of the same dish in two different way but with awesome end result, that everyone licked their fingers too. I used to add some healthy nuts to my gravy which makes it more healthy and yummy too. Will come up with other recipes too in future but with low calorie versions only. You can indulge in these yummilicious dishes without being on guilt trip. It's just like icing on cake, as relish on your favorite dish without getting guilt and fear of gulping too much calories.
Stepwise recipe is given below, do try and don't forget to share your experience with me.

Serves: 4-5
Time : 45 mins

500 gms paneer ( cottage cheese), cubed
2 medium onion, chopped
4 medium tomatoes, chopped
1 small carrot, chopped or grated
7-8 cloves garlic
2 inch ginger, peeled and grated or cut
5-6 cashews
12-15 almonds
2 tsp kitchen king masala
2 tsp kashmiri red chill
2-3 tbsp tomato sauce or puree
Few drops of edible orange red colour( optional)
1/2 tsp garam masala powder
3/4 cup milk
1-2 tsp honey ( as per tartness of tomatoes)
1-2 tsp butter
1 tsp kashoori methi, crushed
Salt to taste

First of all take chopped onion, chopped tomatoes, carrots, cashews, almonds, garlic and ginger in a wok. Add 1- 1 1/2 cup water in it and let it boil, then lower the flame and let it simmer for 15-20 minutes. So that all the veggies and nuts get nicely cooked and tender. Let it cool a little.

Now transfer it in a blender and make nice smooth paste. Strain the paste for more smooth gravy ( I skipped).

Now heat some oil in a wok and add kitchen King masala and Kashmiri red chilli powder, saute for few seconds and add prepared paste. Let it cook for 7-8 minutes.

Now add tomato sauce and cook for further 2 mins. At this stage you can add edible colour as per need ( optional). I ran out of tomato sauce so added 1 tsp of chilli garlic sauce. This step is optional, just for adding some colour and reducing tanginess. You can skip it if not having readymade tomato puree or sauce.

Now add milk slowly and stirring constantly to avoid cuddling. Let it cook for further 4-5 minutes.
Add paneer cubes and salt ,simmer for 2-3 minutes.

Now add honey, garam masala, kasoori methi . Finally add butter and Mix well ,switch off the flame.

Garnish it with some crushed kasoori methi and Your delicious easy low calorie paneer butter masala is ready to be served with roti/naan/paratha/poori/rice or pulao.

It tastes Superb in any of these combo.

* Do use nice ripe red tomatoes for good colour and taste.

* Add honey as per your taste.

* You can adjust consistency of gravy by adding some water along with milk if needed. I kept it nice thick like restaurant ones so avoided adding further liquid.

Kids love this curry so much. You can prepare this for your get together menu too.
Do try and please don't forget to tell how's it turned out for you. Please pour your valuable comments and suggestions here, they meant a lot.

Hello everyone

Now a days who don't like to dig in sizzler platters or hog on pastas with different sauces. But do we know , what makes the main taste in these? Yes , you are right. The main taste makers are the sauces used in these dishes. These sauces enhance the flavour on any dish to many folds, whether it's sizzler/ barbecue or pasta type dishes. So today I have a very distinct flavour  super tempting yet quick and easy onion and oregano sauce. Which I made to go with my pan fried chicken and sautéed veggies platter. And believe me it complimented the whole dish very well.
Step wise recipe is given below, hope you all too fall in love with it.

Serves: 3-4
Time: max 10 mins

1 medium small onion, finely chopped
2 tbsp mayonnaise, I used low fat eggless homemade one
1/4 tsp dried oregano
1/8 + tsp black pepper powder ( as per taste)
1/8 tsp chili flakes
1/8 tsp garlic powder ( optional)
1 tsp whole wheat flour
Salt to taste
Water or milk ( as per need)

Heat some oil in a small pan, add chopped onions. Let it fry till nice golden brown. Be careful , not to burn your onions otherwise the burnt smell will ruin your whole sauce.
Now add whole wheat flour and fry for few seconds.

Add mayonnaise followed by chili flakes, oregano, black pepper powder , garlic powder and salt. Mix well and add milk or water stirring constantly to avoid lump formation.

Now let it simmer for 2 mins and transfer to another bowl.

Your silky yummy sauce is ready to serve.
Either add pasta to this sauce or top it up on your sizzler platter. You can also use it as a dip for your favorite snacks.

You can adjust spices as per your taste preference.
Add milk / water as required to get sauce of right consistency. Sauce thickens on cooling so if needed you can dilute it with warm water/milk .

Hope you will give it a try and please don't forget to share your experience with me. Looking forward for your valuable comments and suggestions, they meant a lot.

Happy cooking....
