TIL (SESAME SEEDS) BURFI

Hello everyone

Today I am sharing a very nostalgic and my all time favorite sweet recipe. Every Makarsankranti I used to miss this sweet since I leaved my native place. Til burfi, though it looks like any other khoya sweet but if you will taste it then only can understand the depth of flavour in it.
This sweet is not so popular as some other sweets , that's why not so easy to find it everywhere you want.
So i thought , why not to give it a try at home. last year too i made it with instant khoya, made of powder milk. It was delicious too but my heart was drooling for some thing authentic. So this time I chose the traditional way of making milk solids (khoya) then using it for my sweet.
As I was not so sure of the end product So missed clicking stepwise pics, but the final output was so so delicious that you will forget the storebought ones. But don't worry, it's so easy to make that you don't need any tutorial to follow, simple instructions are enough.
Recipe is given below, hope you will enjoy making and devouring at this heavenly treat.


TIL ( SESAME SEEDS) BURFI





Time: 2-2:30 hrs
Serves: 25-30 pcs( as per size)

Ingredients

2 Lt full fat milk
300 gms white til ( sesame seeds)
1/4 cup milk powder ( optional)
1/2- 3/4 cup Sugar ( as per taste)
1/2 tsp green cardamom powder ( optional)

Method:

First of all boil milk in a heavy bottom pan. Let it cook on medium to low flame till reduce to 1/3rd, stirring in between to avoid sticking to bottom.
* Be careful while stirring when it thickened, as splutters too much.





Now cook further stirring constantly till it get idli batter like consistency. If want , add milk powder to it at this stage to thicken fast and become a semi solid mass or cook further till you get mawa consistency.

Switch off the flame and let it cool. It will get solidify on cooling.
* So if it seems little liquid when hot, don't worry.





Now dry roast sesame seeds in a pan on low flame till light golden.
Be careful not to burn it. Sesame seeds become bitter if roasted more.
Let it cool.
Grind 3/4 of it to coarse powder.






Now take khoya, sugar, sesame seeds ( ground and whole , both) and green cardamom powder in a heavy bottom pan. Cook on low flame, stirring constantly to avoid sticking to bottom .





When it starts leaving the edges of pan, transfer to a greased tray and spread evenly with help of a spatulla.

You can also sprinkle some sesame seeds all over it.




Let it cool then cut into desired shape and enjoy these delicious unadulterated delicacies.


* If you don't want to make khoya at home then can use store bought khoya too. But then don't forget to saute it well before using.




You can prepare this sweet for any festival and surprise your guests and loved ones with your cullinary skill.

MINESTRONE SOUP

Hello everyone

Soup is always a comforting meal specially in winter. A bowl full of delicious soup and some bread , what you else need to satisfy your tummy in a chilling winter. Though I am not a big admirer of soups but my hubby is, so I have to prepare some for him. But this one really fascinated me too and I had a full bowl of it in one go. It's really surprising for me too as I always just taste soups. This is only to inform you , how delicious it is ☺️☺️. Step wise recipe is given below, do try and please let me know too how's it turned out for you.

MINESTRONE SOUP



Serves: 5-6
Time: 30 mins

Ingredients 

1/2 cup soaked and boiled kidney beans or black eyed beans, I used later one
1- 1 1/2 cup mix veg, finely chopped( carrots, beans,spring onion, capsicum , any leafy veggies etc)
1/2 cup elbow macaroni ( you can use any pasta of your choice)
1 tbsp minced garlic
1 medium onion, finely chopped 
2 medium tomatoes, pureed
1 big tomato, finely chopped
1 green chilli finely chopped 
1/4 tsp dried thyme
1/4 tsp dried rosemary 
1/2 tsp dried oregano
1/2 tsp basil , I skipped
4-5 cup water
1 tbsp cornflour ( optional)
Black pepper powder, as per taste
Salt to taste

Method:

Heat little oil in a wok, add minced garlic. Saute till little brown then add chopped onions and chilli. Saute till transparent.


 Now add mix veggies and saute for 4-5 mins . 



Add pureed and chopped tomatoes and again cook till raw smell of tomatoes goes off. Now add thyme,oregano,rosemary and black pepper powder. 



Mix well then add boiled black eyed beans or rajma and pasta. Again give it a good mix and add water and salt. Adjust water as per your choice of consistency of your soup. 



Cover it with lid and let it cook at medium heat till your pasta it nicely cooked. Now if you feel it is more watery then add cornflour mixed in little water and give it a quick stir, Otherwise skip this step. Cook for another five mins. 



Adjust salt and pepper as per your taste and your delicious healthy comforting soup is ready to serve. 



You can add any veggies or beans of your choice. If you have fresh basil leaves then do add , it will enhance its flavor. Always be cautious while using dried herbs , they have very strong flavours although they act as flavour enhancer but if used in large quantity then will ruin your whole dish, so always use as told. This soup is so easy to make yet super delicious and filling too. You can also add chicken or paneer cubes to make it more proteinous. It can be prepared either for dinner or to satisfy evening hunger sprang .

HOT N SOUR VEG NOODLE SOUP

Hello everyone

I am here again after almost one month of gap as was busy in relishing family time. But I am back with a very delicious and kids friendly soup recipe , just perfect for winter season. As kids love noodles in their every meal so added these with lots of healthy veggies to make sure that kids get more and more healthy diet along with yumminess. This is so easy to prepare and less time consuming, so serve hot to comfort everyone in this chilling winter. Hope you will like this easy yet healthy yummy soup.

HOT N SOUR VEG NOODLE SOUP



Serves: 4-5
Time: 30 mins


Ingredients

3/4 cup finely chopped veggies ( beans, carrot, capsicum)
1 cup finely chopped cabbages( red and white) and spinach
1 medium onion, finely chopped 
4-5 cloves garlic, minced
1 spring onion, finely chopped
50 gms or as per like, Spaghetti noodles
1 1/2 tbsp corn flour
1 tsp vinegar 
Soya sauce, red chilli sauce, tomato sauce, black pepper and salt , as per taste



Method:

Heat some oil in a wok, add minced garlic. When it get golden then add chopped onions and fry till transparent.



 Now add chopped veggies and saute for 3-4 mins. Add chopped cabbage and spinach, saute for 5 mins. 


Add spaghetti and 4 cups water. Let it cook for 6-8 mins at medium flame or till spaghetti gets cooked.
 Now add all sauces,vinegar, salt and black pepper as per your taste. 


Now add cornflour in 1/4 cup water and add to soup. Keep stirring and let it cook for another 5 mins. Switch off the flame and add chopped spring onions and mix. 


Your yummy hot and sour soup is ready to serve. 


You can use any veggies as per your like and availability. Add sauces as per your taste as everyone has his/her own unique taste buds. 
I like it quit hot and tangy so added chilli and soya sauce in plenty rather than tomato one. If you like sweet side , then add more tomato sauce or add some sugar to your soup.
You can also use water as per your preference of consistency of soup.
