MIX VEGGIES AND SPINACH OATS SEEKH KABAB

Hello everyone

Till now you all might be come to know that I am a pity mother of lil fussy eater 😃. He doesn't like any veggies, But he loves to eat tikkis and kababs . So to feed him some veggies I use to make different types of kababs using different mix and match of veggies . This time tried to add some spinach to make iron rich and tempting looking kababs for him. Not only him but we all enjoyed every bite of it. Used capsicum, beans, carrots, potato and some oats to make these beauties. These are pan fried in very less oil , which makes it suitable snacks for weight watchers too. But i am so happy that my lil one loved it and relished it without fuss.
Recipe is given below, hope to make you happy with its superb taste.

MIX VEGGIES AND SPINACH OATS SEEKH KABAB






Serves: 5-6
Time: 30 mins( leaving the chilling time)

Ingredients 

1 1/2 cup very finely chopped mixed veggies ( beans , carrots, colored capsicum) , I used chopper to chop the veggies
1 cup spinach,finely chopped
3-4 medium size potatoes, boiled and mashed
2 big onions, finely chopped
3-4 green chilies, finely chopped
1/2 cup oats, slightly dry roasted
1/4 cup green coriander leaves, finely chopped( optional)
tsp ginger garlic paste
1/2 tsp black pepper powder
1/2 tsp cumin powder
1/4 tsp turmeric powder 
1/4 tsp garam masala powder
1/2-1 tsp chaat masala powder
Salt to taste
Oil

Method: 

Heat some oil in a wok, add chopped onions and chilies. Let them fry till golden, now add ginger garlic paste and saute for 2 mins. 

Now add chopped mixed veggies and some salt, saute for 4-5 mins. Add all dry spice powder except chaat masala . Saute for 2-3 mins and add spinach ,cover to cook the veggies till tender. 

Add mashed potatoes and oats,again saute for 2-3 minutes. Now add  chaat masala and adjust salt. 

Finally add coriander leaves and mix well. Switch off the flame and your mixture for Kabab is ready. Let it chill in fridge for 1 hr. 




Now make desired shape of kabab from mixture . I took orange size ball of mixture and placed on a skewer as shown in pic.to make seekh kababs. If you are not comfortable in doing so then can simply make flattened disc shape .



shallow fry on a non stick tawa till nice golden on all sides. 




Your nice tender and delicious kabab is ready to be served with any chutney or sauce. I served with mint dip.




*You can use any veggies of your choice,  I used whatever was available.

*You can adjust spices as per your taste.





*You can prepare its mixture prior and keep in fridge. Just prepare kabab when have guests at home or can make it for kids tiffin . 





These are not only delicious but healthy too, as full of iron and fibers . Enjoy your day with yummy and healthy snacks. You can use these kababs as patties for your buns too.

SOYA CHUNKS AND PANEER VEG KABAB

Till now you all might be come to know that I am a pity mother of lil fussy eater 😃. Few days back while watching his favorite movie he ate some chicken kabab, of course not home made. And luckily he liked it too much. Even after returning to home he used to say that he will love to hog on these snacks again. Although I am not pure vegetarian but have very limited access to these dishes in my kitchen. But as he is interested in it , which occurs once in a blue moon, I thought to do little experiment with my veg options. And viola , the experiment was a big successful one. Not only him but we all enjoyed every bite of it. Used capsicum, beans, carrots, soya chunks, potato and cottage cheese to make these beauties. These are pan fried in very less oil , which makes it suitable snacks for weight watchers too. But i am so happy that my lil one loved it and He took these in his tiffin too.
Recipe is given below, hope to make you happy with its superb taste.

SOYA CHUNKS AND PANEER VEG KABAB



Serves: 5-6

Ingredients 

 2- 2 1/2 cup very finely chopped mixed veggies ( beans , carrots, colored capsicum) , I used chopper to chop the veggies
3/4 cup soya chunks 
1 cup cottage cheese ( paneer), crumbled 
3-4 medium size potatoes, boiled and mashed
2 big onions, finely chopped
3-4 green chilies, finely chopped
1/4 cup green coriander leaves, finely chopped
1 tsp ginger garlic paste
1/2 tsp black pepper powder
1/2 tsp cumin powder
1/4 tsp turmeric powder 
1/4 tsp garam masala powder
1/2-1 tsp chaat masala powder
1/4 cup bread crumbs ( optional)
Salt to taste
Oil

Method: 

First of all soak soya chunks in hot water for 15-20 mins or microwave it in sufficient water for 4-5 mints. Now wash it with tap water 2-3 times, followed by squeezing every time. Now blend it in chopper or mixer to get fine granules. Keep aside for later use.

Heat some oil in a wok, add chopped onions and chilies. Let them fry till golden, now add ginger garlic paste and saute for 2 mins. 

Now add chopped mixed veggies and some salt, saute for 4-5 mins. Add all dry spice powder except chaat masala . Saute for 2-3 mins and cover to cook the veggies till tender. 

Now add soya granules and again saute for 4-5 mins. Add mashed potatoes and again saute for 2-3 minutes. Now add crumbled paneer, chaat masala and adjust salt. 

Finally add coriander leaves and mix well. Switch off the flame and your mixture for Kabab is ready. Let it chill in fridge for 1 hr. If you feel your mixture is not too firm to make clean shapes then add bread crumb to it and mix well. Adding bread crumbs is completely optional.


Now make desired shape of kabab from mixture . 



shallow fry on a non stick tawa till nice golden on both sides. 



Your nice tender and delicious kabab is ready to be served with any chutney or sauce.

LOW CALORIE CHICKEN TIKKA MASALA

Today I have recipe of a very popular chicken dish among chicken lovers. Though this is usually very rich and calorie loaded dish which we get in maximum hotels and dhabas , but I tried to give it a healthy touch by adding almonds and omitting cream , even then it came out so tempting and finger licking that you can't say it's low calorie and something is missing from traditional one. And the overnight marination of chicken gave it so tender and juicy texture that you can't deny for more and more pieces. Even my daughter, who is not very fond of chicken pieces, took more pieces and saying it's the best chicken I had ever.
Stepwise recipe is given below, hope you all will definitely love to try this.

LOW CALORIE CHICKEN TIKKA MASALA



Serves: 3-4
Time: 1:30 hr 

Ingredients 

1/2 kg skinless chicken breast, cubed
1 cup colored capsicum, cubed
2 medium onions, cubed

For marination:
3/4cup thick yoghurt( curd)
1 1/2 tbsp corn flour 
1/2 tsp cumin powder
1/2 tsp tandoori masala 
1/2 tsp black pepper powder 
1/2 tsp chaat masala powder
1/4 tsp garam masala
1/2 tsp red chilli powder 
1/2 tsp ginger garlic paste 
1/2 tsp chicken masala
1/4 tsp turmeric powder 
1 tsp oil
1 pinch orange red edible color(optional)
Salt to taste

For gravy:
1 pinch orange red color 
1 tbsp kasoori methi
2/3 cup thick yoghurt, beaten
1 1/2 tsp tandoori masala
1/2 tsp chicken masala
1/4 tsp turmeric powder 
1 tsp Kashmiri red chilli powder 
2 green chillies, broken in halves
1/2 tsp sugar( completely optional)
Salt to taste

For paste
15 almonds
4 cloves
4 green cardamom 
2 inch piece cinnamon 
10-12 black pepper corns
4 medium tomatoes 
2 medium onions, sliced
5-6 cloves garlic
1 inch piece ginger

Method:

First of all marinate cubed chicken,capsicum and onions in paste of marination section ingredients and keep in fridge for at least 4-5 hr, but for best result,keep it overnight.




Now boil or pressure cook all ingredients given under, for paste section, let it cool and make smooth paste in grinder. 




After marination is done, arrange chicken, capsicum and onions in skewer as per your choice and grill till it get nice tender,smoky and little charred from all sides. You can also do it on direct flame for more smoky effect.





 Your tender chicken tikka is ready to serve as starter, just sprinkle some chaat masala and squeeze little lime juice on it and serve.




Now to serve it in main dish lets start making its gravy. Heat oil in a wok , add prepared paste and broken green chillies, fry for 5 mins now add turmeric powder, chilli powder, chicken masala and tandoori masala. Fry till it starts leaving sides of the wok and makes lump. Add beaten curd ,add rest of marination, if any , stirring constantly to get smooth gravy.  Add pinch of colour mix well , cook for 2 mins .



Add water to adjust gravy consistency as per your like. Let it boil then add grilled chicken and veggies.
Add salt ,sugar and kasoori methi. Simmer for 5 more mins and done.



Chicken tikka masala is ready to serve.



Soak skewer in water for at least 1 hr to avoid its burning while grilling.
It didn't use sugar , but if you find your curry a bit sour then can add it to balance the sourness.
Add water generously as the curry will thicken after cooling.
Always use fresh yoghurt and nice ripen red tomatoes to get nice red color and less sour gravy.




Your smoky tempting and tender chicken tikka masala is ready to go well with naan, roti or any rice. It can be included in any party menu. So cook and get everyone's praise with this guilt free yummy side dish cum starter.

PANEER TIKKA MASALA WITHOUT CREAM

My paneer mania is still on so today I have another low calorie lip smacking paneer dish for you all. I was planning to try paneer tikka for long but everytime end up with some other dish instead of it. So this time I prepared myself a day before to strictly stick to the same one and finally made this yummy guilt free paneer tikka masala . Loved the color and texture of the gravy and also served as paneer tikka, starter. In both ways it's just awesome. Step wise recipe is given below hope you all too fall in love with this yummy dish. 

PANEER TIKKA MASALA WITHOUT CREAM




Serves: 3-4
Time:1hr

Ingredients 

2 cup cottage cheese ( paneer) , cubed
1 cup colored capsicum, cubed
2 medium onions, cubed

For marination:
1 cup thick yoghurt( curd)
1 1/2 tbsp corn flour 
1/2 tsp cumin powder
1/2 tsp tandoori masala 
1/2 tsp black pepper powder 
1/2 tsp chaat masala powder
1/4 tsp garam masala
1/2 tsp red chilli powder 
1/2 tsp ginger garlic paste 
1/2 tsp mint powder or crushed mints
1/4 tsp turmeric powder 
1 pinch orange red edible color(optional)
Salt to taste

For gravy:
1 pinch orange red color 
1 tbsp kasoori methi
1 cup thick milk or evaporated milk
1 1/2 tsp tandoori masala
1/4 tsp turmeric powder 
1 tsp Kashmiri red chilli powder 
2 green chillies, broken in halves
1/2 tsp sugar( completely optional)
Salt to taste

For paste
15 almonds

 Your paneer tikka is ready to serve as starter.
