CHEESY AND SPICY OATS PASTA LOADED WITH VEGGIES

Hello everyone

Being a pasta fan , I use to experiment with new taste and flavours by using different healthy options in hand. Though I generally use oats to make sauce for my pastas to make it more healthier but this time used oats pasta , which I got as a sample in mall. It's really worth trying. After trying many saucy pastas , this time I made non saucy yet superbly delicious veggie pasta for breakfast and for my kids tiffin. It turned out so yummy and cheesy that no pasta fan can resist asking for another serving. I just used simple and handy ingredients but the result is just wow. So hope you will too love this simple yet delicious preparation.
Recipe of the same is given below, just give it a try.

CHEESY AND SPICY OATS PASTA LOADED WITH VEGGIES


Serves: 3-4
Time: 30 mins

Ingredients 

2 cup oats pasta , boiled and drained ( keep the drained water)
1 medium carrot, sliced thinly
1 spring onion, chopped 
1/4 cup colored capsicum, sliced
1/2 cup cabbage, shredded
1 big onion, sliced
2 green chillies,finely chopped 
1 tsp ginger garlic paste 
2 medium tomatoes,sliced
2-3 tsp tomato sauce or chilli tomato sauce( as per taste)
1/4 tsp turmeric powder 
1/4 tsp black pepper powder 
1/4 tsp oregano
1/4 cup mozzarella cheese, grated ( you can add more for more cheesy texture)
Salt to taste

Method:

Heat oil in a wok, add sliced onions and chilies,saute till transparent. Now add ginger garlic paste and saute for a minute. Now add carrots saute for 2-3 mins then add all other veggies except tomatoes. Saute for 4-5 minutes then add turmeric powder, black pepper powder ,salt and sliced tomatoes. Again saute for 4-5 minutes and add drained pasta. Saute for 3-4 minutes. Adjust salt, add tomato or chilli tomato sauce ,oregano and mozzarella cheese , mix well and serve hot. Your ooey gooey cheesy pasta is ready to serve. Enjoy hot with a cup of tea or coffee.



 
*You can use any pasta of your choice and availability.

*You can also add any veggies of your choice like peas, sweet corns, brocoli etc. I used whatever was in hand.



* If you feel pasta looks too dry then can add 2-3 tbsp of pasta drained water and mix well. Consistency will become fine without much effort.



* Always boil pasta to the recommended time on its packet. Never over do it otherwise it will spoil the whole dish.

*  You can adjust spices as per your taste.




This pasta can be served as breakfast or can be a good option for lunch box too. You can have it any time without much guilt. Hope you all will like this simple healthy yet delicious pasta. Please pour your valuable comments and suggestions here, they meant a lot to me.

ONION AND OREGANO SAUCE FOR SIZZLER AND PASTA

Hello everyone

Now a days who don't like to dig in sizzler platters or hog on pastas with different sauces. But do we know , what makes the main taste in these? Yes , you are right. The main taste makers are the sauces used in these dishes. These sauces enhance the flavour on any dish to many folds, whether it's sizzler/ barbecue or pasta type dishes. So today I have a very distinct flavour  super tempting yet quick and easy onion and oregano sauce. Which I made to go with my pan fried chicken and sautéed veggies platter. And believe me it complimented the whole dish very well.
Step wise recipe is given below, hope you all too fall in love with it.

ONION AND OREGANO SAUCE



Serves: 3-4
Time: max 10 mins


Ingredients 

1 medium small onion, finely chopped 
2 tbsp mayonnaise, I used low fat eggless homemade one
1/4 tsp dried oregano
1/8 + tsp black pepper powder ( as per taste)
1/8 tsp chili flakes
1/8 tsp garlic powder ( optional)
1 tsp whole wheat flour 
Salt to taste
Water or milk ( as per need)
Oil

Method:

Heat some oil in a small pan, add chopped onions. Let it fry till nice golden brown. Be careful , not to burn your onions otherwise the burnt smell will ruin your whole sauce.
Now add whole wheat flour and fry for few seconds. 


Add mayonnaise followed by chili flakes, oregano, black pepper powder , garlic powder and salt. Mix well and add milk or water stirring constantly to avoid lump formation. 



Now let it simmer for 2 mins and transfer to another bowl.


 Your silky yummy sauce is ready to serve.
Either add pasta to this sauce or top it up on your sizzler platter. You can also use it as a dip for your favorite snacks.


You can adjust spices as per your taste preference.
Add milk / water as required to get sauce of right consistency. Sauce thickens on cooling so if needed you can dilute it with warm water/milk .

PENNE PASTA IN ZERO OIL OATS AND SPINACH CREAMY SAUCE

Hello everyone 
Pasta... I think most of us including kids and elders, love to have pasta ,But at the same time try to avoid it some time due to sauce and creams used to make it delicious. My kids love to have these in their tiffin too,So I thought why not to give it a healthy twist that make people comfortable to have it without any guilt. I just added puréed onions, paneer , spinach and oats to the regular pasta and it turned out super delicious, guilt free healthy breakfast for us. 
Recipe of the same is given below, just give it a try.

PENNE PASTA IN ZERO OIL OATS AND SPINACH CREAMY SAUCE




Ingredients 

2 cup pasta , boiled and drained( reserve its water for use later)
1/3 cup oats
1/2 cup spinach , blanched
2 big onion, sliced
3-4 garlic cloves
2 green chillies,slit
1/4 cup paneer ( cottage cheese)
1/2 cup milk
1/2 tsp white /black pepper powder 
1/2 tsp garlic powder ( optional)
1/2 tsp dried oregano( optional)
1/2 cup water
Salt to taste

Method:

First of all boil sliced onions, garlic cloves, green chilies and oats in 1/2 cup water, add more if needed. Lastly add spinach and paneer cubes. Let it cool and grind to a smooth creamy paste. 


Now transfer paste to the same wok , add milk and let it boil.  Then add white /black pepper powder, garlic powder , oregano and salt.

Now add boiled pasta, mix well . let it cook till every thing get nicely coated with saucy consistency. If needed add some water drained from pasta to make sauce of right consistency. 



You can also add some butter for taste while adding sauce to wok. 
And your guilt free yummy pasta is ready to be served.




You can use any pasta of your choice, I added penne pasta.
You can also garnish it as you like .

NO OIL , NO CREAM PASTA IN HEALTHY WHITE CREAMY SAUCE

My kids love to have these in their tiffin too,So I thought why not to give it a healthy twist that make people comfortable to have it without any guilt. I just added puréed onions, paneer and oats to the regular pasta and it turned out super delicious, guilt free healthy breakfast for us.

8-10 almonds ( optional)
1/2 cup water
Salt to taste

Method:

First of all boil sliced onions, garlic cloves, green chilies , almonds and oats in 1/2 cup water, add more if needed. Let it cool and grind to a smooth creamy paste along with paneer. 



Now transfer paste to the same wok , add milk and let it boil.  Then add white /black pepper powder, garlic powder , oregano and salt.



 Now add boiled pasta, mix well . let it cook till every thing get nicely coated with saucy consistency. If needed add some water drained from pasta to make sauce of right consistency. 



You can also add some butter for taste while adding sauce to wok. 
And your guilt free yummy pasta is ready to be served.



You can use any pasta of your choice, I added corni pasta.
You can also garnish it as you like , I sprinkled chilli flakes and dried oregano.
