EGGLESS RAINBOW MARBLE CAKE

Hello everyone
Cakes are generally loved by all sweet tooth ones but if it comes to colorful soft and moist cake, then who can deny to atleast one bite. Yesterday my daughter, after coming from her school announced that she wants to carry something yummy for her friends to share as they want to celebrate Independence Day ...😳😳.. I started to scratch my head to get any clue of Independence Day on 22nd October, but failed 😐. So to satisfy my curiosity, I asked her about the celebration and what she told was really funny and nostalgic too😊. As their exams were finished yesterday and they got independence from exams so they are celebrating πŸŽ‰πŸŽŠ πŸ˜ƒπŸ˜ƒ.
But the main problem was, what to make for her and after rejecting nearly a dozen of options she agreed for a rainbow cake. I never made this cake before but what to do, gathered all my courage and jumped in the battle field😁😁. And to my surprise and good luck the cake came out so soft, moist and most importantly eye treat to everyone. 
The step wise recipe of this cake is given below, hope you all will definitely like it.

EGGLESS RAINBOW MARBLE CAKE




Serves: 15-20
Time: 1:20 hrs

Ingredients        * I made big cake for sharing but if you want smaller one then half the quantity used.

4 cups all purpose flour ( maida)
2 cups powder sugar
1 cup oil ( any without flavour)
2 cup yogurt (curd)
1 cup warm milk
1 tsp baking soda
2 tsp baking powder 
2 tsp vanilla essence
Food colors 

Method:

First of all grease a big baking tray and dust some flour on it evenly. Remove extra flour by tapping and keep it aside .



Seive flour, baking powder and baking soda together so that they will get mixed uniformly. Then add powdered sugar to flour and again mix well. 



Now in another bowl mix yogurt, oil and vanilla essence together well. 



Add flour mix in yogurt mix in batches and keep folding. Now add milk and make a smooth batter neither too thick nor runny. If needed add more milk to get idli batter like consistency.



 Now divide batter in equal quantity , desired number of colors i.e. 6-7 equal parts of batter. Now add color to each batter and mix well. Don't over mix otherwise you will end up with dense cake.



 Now place a butter paper in the baking tray and pour one batter . Tap the tray to spread one batter then pour other, similarly pour all batters one by one followed by tapping every time. 



Now take a skewer and make lines on cake (optional) . 



Now bake it in a preheated oven at 180 degree C for 50 -55 mins. Keep an eye on it after 40 mins as different oven takes different time to bake. Mine took exactly 50 mins. For doneness checking, insert a tooth pick or skewer in middle of cake , if it comes out clean with some crumbles on it then it's ready otherwise bake for some more time.




After done let the cake rest in baking tray for 8-10 mins then invert on a wire rack and let it cool completely before slicing to get clean slices.




Your colorful, soft and moist cake is ready to serve on any occasion as kids will always be ready to gobble it up. Even there is no need of any frosting or icing on it as its so beautiful that you don't want to hide.




You can also make it in microwave at high for 10-12 mins. But keep checking after 10 mins as over microwaved cakes become chewy and hard.
If you want to bake a small cake then can easily half all the ingredients and don't forget to half the baking time too and keep checking for doneness 😊.

WHOLE WHEAT FLOUR CUSTARD BANANA CAKE

Who don't like cakes..... It a very silly question for sweet lovers as the answer is well known, of course die for cake. But when question comes for health then we come on our backfoot with sad expression like no I can't have cakes. If you are also a die for cake person then weight ... Why are you getting sad, I have a better option for you like a healthy cum yummy cake. Today I have whole wheat flour custard banana cake, full of goodness of whole wheat and banana with minimum sugar and oil, what else you want 😊. Recipe is given below, hope you will like and definitely give it a try.

WHOLE WHEAT FLOUR CUSTARD BANANA CAKE



Serves: 4-5
Time: 45 mins

Ingredients 

1 1/4 cup whole wheat flour
1/4 cup custard powder or corn flour
2 bananas, over ripe
1 tbsp sugar
1/4 cup oil
1 tbsp curd( yogurt) (optional)
1/3 cup milk, at room temp
1/3 cup milk powder
1/2 tsp baking soda
1 1/4 tsp baking powder
1/2 tsp cinnamon powder ( optional)
1/8 tsp salt
1 tsp vanilla essence 
2 tbsp dates syrup or dates puree( optional)
10-12 walnuts, roughly chopped ( optional)

Method:

First of all grease a baking pan and dust it with some flour, keep it aside.

Mix well whole wheat flour, custard powder, milk powder, baking soda, baking powder, cinnamon powder, walnuts and salt together, keep it aside for later use.



Now mash bananas with a fork till they become a lump less puree. Add sugar,vanilla essence , curd and dates syrup in it and mix well till sugar gets dissolve. Now add oil , again mix well. 



Add flour mixture and fold it to make a lump less smooth batter. Pour in greased baking pan.




 Bake in a preheated oven at 180degree C for 30 mins, or till tooth pick inserted in it comes out clean. Mine took exact 30 mins, so keep an eye on it after 25mins as different oven take different time. Time also depends on baking pans, size and shape.


Let it cool for 5 mins then invert on a wire rack.



 Let it cool completely before slicing, to get neat slices.




Your super yummy and healthy cake slices are ready to go with your cup of tea.
Enjoy these guilt free scrumptious sweet treat any time. It's good for kids tiffin and mid meal hunger sprang.




You can use any spices and any dry fruits of your choice. 
You can increase or decrease the quantity of sugar as per your taste and sweetness of bananas, but this one is for perfect sweetness😊.
You can also use any shape of baking pan, but then baking time may change, so be cautious while baking and keep checking in between.

NO BUTTER NO SUGAR EGGLESS SPICED OATS BANANA WALNUT LOAF

Hello everyone 
My sweet tooth daughter always used to ask why healthy stuffs are not yummy and what we like to eat are always comes under unhealthy category πŸ˜•πŸ˜•. Actually my whole family is sweet tooth and also having great tendency to get fat too easily😭 , so to avoid extra calories in our diet we have to make a reasonable distance with sugary and fatty stuffs😰. 
But this is also like a boon too me, so that I can experiment with healthy stuffs and turn them to interesting healthy cum yummy dishes.
This cake is the best example of taste with health. I used all healthy alternatives to usual ingredients of a cake, which lead to this super yummy healthy sweet treat. Now no need to take just one bite of your sweet crush to satisfy your craving. And the second best thing is , it's best and yummy way to use your over ripe bananas. Spices added in this cake,  boosted its flavor to another level. You can say it a perfect combo for your cup of tea. A happy dessert to health conscious fellows.
Step wise recipe is given below, hope you will enjoy this tasty, yummy and healthy treat. sure give it a try , you will never regret.

NO BUTTER NO SUGAR SPICED OATS WHOLE WHEAT FLOUR BANANA WALNUT LOAF





Serves: 5-6

3 big bananas, ripe
1/2 cup jaggery, grated
1/3 cup oil
2 tbsp thick yogurt( curd)
1/2 tsp baking soda
1 1/4 tsp baking powder
1/2 tsp cinnamon powder 
1/8 tsp salt
1 inch ginger, grated
1 tsp vanilla essence 
10-12 walnuts, roughly chopped 

Method:

First of all grease a loaf pan and dust it with some flour, keep it aside.




Mix well whole wheat flour, oats powder, baking soda, baking powder, cinnamon powder, walnuts and salt together, keep it aside for later use.




Now mash bananas with a fork till they become a lump less puree. Add grated jaggery , vanilla essence and curd in it and mix well till jaggery gets dissolve. Now add grated ginger and oil , again mix well. 



Add flour mixture and fold it to make a lump less smooth batter. Pour in greased loaf pan.



 Bake in a preheated oven at 180degree C for 40 - 50 mins, or till tooth pick inserted in it comes out clean. Mine took 55 mins, so keep an eye on it after 45 mins as different oven take different time. Time also depends on baking pans, size and shape.
Let it cool for 5 mins then invert on a wire rack.


 Let it cool completely before slicing, to get neat slices.



Your super yummy and healthy cake slices are ready to go with your cup of tea.

WHOLE WHEAT FLOUR DORA CAKES ( DORAYAKIS)

Hello everyone 

My kids are a big fan of doremon cartoon. They often see doremon eating his favorite Dora cakes and they too start drooling over it. I never thought it would be so easy to prepare at home too. But I searched online and after too many twist and turns ,Tried it with some healthy twist. So here is mine whole wheat flour Dora cakes without red bean paste as filling. As I knew my fussy eater will definitely create scene that's why substituted red bean paste with Nutella. And believe me they relished it as never before. Soon will come up with its eggless version too, but till then enjoy these beauties. My kids got surprised and over excited to see these chocolate oozing soft and fluffy DORAYAKIS .Special thanks to Garima for inspiration. 
Step wise recipe is given below, hope you all will definitely like and try it.

WHOLE WHEAT FLOUR DORA CAKES ( DORAYAKIS )




Yield: 8 pan cakes( 4 Dora cakes)
Time: 30 mins

Ingredients 
Rt
2 eggs ( at room temperature)
1 cup + 1 tbsp whole wheat flour 
1/2 cup powdered sugar 
3/4 cup milk (at room temperature)
1 tbsp honey 
1/2 tsp vanilla essence 
1 tsp baking soda
Little oil to drizzle 
Nutella or jam for filling 

Method:

Mix whole wheat flour and baking powder well and keep for later use.



Whisk eggs, sugar and honey together till little frothy . It will take 4-5 mins if you are whisking with hands. So give it time, as more lighter your egg mixture will give you more soft and fluffy pancakes.



Now add milk and vanilla essence in it and mix well. Now add flour to it in batches and mix well by folding, to a lump less smooth batter.



Now heat a nonstick tawa or pan on medium low flame, drizzle some oil on it and wipe excess oil with paper towel. Pour a ladle full of batter on it and let it cook from one side. It will take nearly 1 1/2 - 2 mins.Once you see lots of bubble on it and sides become dry then flip and cook for another one min and done.



 In the same manner, make all the pancakes. 



Be careful while cooking, to get nice brown cakes ,always use medium to low flame and flip pancake immediately once it's sides are getting dry and having lots of bubbles on top. Otherwise you will get blackish pancakes with burnt flavour. And always use same amount of batter for each pancake to get even size Dora cakes.
Now take one pancake with nice brown side down, keep 1 tbsp Nutella or jam in middle and cover it with another pancake with its brown side up. Lightly press it with palm and pinch its edges to seal.




Your soft fluffy and yummy Dora cakes are ready to serve.






For eggless version you can substitute 2 eggs by 1 fully ripe medium size banana. Whisk banana till fluffy then follow the same procedure as above.

LOW FAT VEG MANGO CHEESE CAKE

Hello everyone
In summer, there are mangoes and mangoes everywhere . Everyone is just mad on mangoes these days , making mango cakes, mango ice creams, mango pudding, mango jelly and many more in the row. I am also one of them😊 So after trying my hands on mango jelly and ice cream , now I thought of trying mango cheese cake for first time. But its richness of calories made me always hesitate to try , though I am too fond of trying healthy and guilt free cooking, so came up with a healthy substitute of fatty cheese and cream used in this cake. Accidentally or you can say luckily my 1 1/2 lt of milk got cuddled and hence I got a golden chance for my experiment. As I was not so sure for the perfect end result so missed to click all steps pics but to my surprise, the final outcome is just wow and of course a guilt free dessert.
Recipe is given below, hope you all will definitely like it.

LOW FAT VEG MANGO CHEESE CAKE



Ingredients 

1 1/2 lt milk 
1 tbsp lemon juice or vinegar 
1 1/3 cup mango puree 
2 tbsp sugar, you can add more
5 gm agar agar( China grass)
3/4 cup water
12-15 any sweet biscuit, I used 4 belvita biscuits 
1 tsp ghee or butter

Method:

First of all boil milk, then add lemon juice or vinegar , little by little till it get cuddle. Then strain it in a muslin or any fine cotton cloth. Wash it under tap water to remove sourness of vinegar or lemon from cheese. Then squeeze it well and hang some where for at least 1 hr to drain excess water in it. Now your cheese is ready to use.



Soak agar agar strips in water for at least 20 mins. Then take 3/4 cup of water in a pan, add soaked agar agar and boil. After boiling, lower the flame and let it simmer till agar agar get completely dissolved in water. In meanwhile take cheese in mixer and churn till smooth, both not too much. Now add 1 cup mango pulp and sugar in it and churn again for 2-3 pulses only. Now pour it in a bowl.



Now make powder of biscuits in a mixer and add ghee or butter in it. Take a greased pan of your choice, spread this biscuit ghee mixture in it evenly and press with a spatula to get a firm base.



Now in cheese mango mixture add agar agar liquid, little more than half the quantity. Mix well and pour it on biscuit base evenly. Tap the pan to remove any air bubble formed .  Keep the pan in freezer for 10 mins. Now take 1/3 cup of mango puree and add rest of agar agar liquid and mix well. Now take out the pan from freezer and pour this mango puree all over it evenly and tap the pan to get smooth surface. Now keep the pan in refrigerator overnight. For demolding , run a clean knife along its sides so that it leave the edges of pan then carefully invert it on a chilled plate and then invert it once again on serving plate, and done. But will suggest to either use spring form mold or use butter paper in base to make it easier to demold as mine got little deformed in inverting twice.



 Your mildly sweet guilt free veg mango cheese cake is ready to serve.
Be careful with agar agar, as it can set at room temp too. So when we have to wait for next step then keep agar agar mixture bowl in boiling hot water to avoid its jelly formation. If you want good sweet dessert then you can add more sugar to cheese mixture and also some sugar can be added in upper mango mixture too.

MICROWAVE EGGLESS NO BUTTER CHOCO SPONGE CAKE

Hello everyone
Today I am sharing a very easy yet tempting eggless chocolate cake which I made for my daughter's b'day. Icing or frosting is your own choice , whether you want or not but this cake itself is just an awesome delight for your guests on any occasion. As you know I always try to make stuffs healthier as much as I can. So here also I used 50:50 APF and whole wheat flour and substituted butter with refined oil. It's all time favorite cake of my kids and hope you all will also like it. Recipe is adapted from Tarala Dalal's recipe with my own twist and turns.
Recipe is given below .

 MICROWAVE EGGLESS NO BUTTER CHOCO SPONGE CAKE




Ingredients

3/4 cup all purpose flour ( maida)
3/4 cup whole wheat flour
3 tbsp cocoa powder
1/2 cup refined oil
3/4 cup water
3/4 cup sugar ( I used little lesser )
6 tbsp yoghurt ( curd, dahi)
3/4 tsp baking soda
1 tsp vanilla essence



Method:

Beat yoghurt well and mix baking soda in it softly, keep aside. Now mix both flours and cocoa powder together. Heat water in a microwave safe bowl for 2 mins at high. Then add sugar, water and oil together and mix well till sugar dissolves . Now add yoghurt mixture, vanilla essence and flours in it and fold gently to get lump less batter. Transfer batter in a greased microwave container and microwave for 5 mins at high. Check for doneness by inserting knife or skewer in middle of cake if it came out clean then done , otherwise microwave it for another 30 secs. Different microwave may take different cooking time. Mine took exactly 5mins 30 secs. Let it rest for 5-10 mins then invert on a wire rack and let it cool completely before doing any frosting . 






As I made doll cake for my daughter's b'day , so for it I made two cakes using this recipe , one round and other dome shaped of same diameter .Arranged it one above other and placed a doll at top then did frosting. If you want extra flavour then can cut cake horizontally and apply some cream on it , I added Nutella layers in between each layers.
