HOME STYLE BUTTER CHICKEN

Hello everyone 
Butter chicken.....this name brings first of all strong craving for it then comes lots of butter and cream in mind and finally make us to go on back foot , if you are calorie conscious and loves healthy eating. Why only others have all the fun 😉 why not we healthy eaters too have all that fun of lip smacking gorgeous dishes. So here is scrumptious butter chicken recipe with almost less than half calories, than regular recipe. Hope you all will appreciate my this initiative, step wise recipe is given below.

HOME STYLE BUTTER CHICKEN 



Ingredients 

1 kg boneless chicken breast , cubed
3 big onions, very finely chopped or grated
2 big tomatoes, finely chopped or purried 
1 1/2 tbsp ginger garlic paste 
1 1/2 tsp turmeric powder 
1 1/2 tbsp coriander powder 
1 tsp kitchen king masala
1 1/2 tsp Kashmiri red chilli powder 
2-3 green chillies, broken in halves
1 cup thick yoghurt (curd), beaten
10-12 almonds, soaked and puréed( optional)
1 tbsp kasoori methi leaves, crushed
1 tsp sugar ( completely optional)
Salt to taste

For tempering:



2 bay leaves 
2 big cardamom
4 cloves 
4 green cardamom 
2-3 inches cinnamon sticks 

Method:

Heat 2-3 tbsp oil in a big wok, add all spices of tempering section, saute for 2 mins till they become aromatic. Then add onions and little salt. Saute till onion become light golden, add ginger garlic paste and broken green chillies and saute for 2 mins. 



Now add chicken cubes, turmeric powder and some salt , fry on high flame for 5 mins stirring continuously to avoid sticking to bottom, till chicken get white from all sides. Lower the flame, add chilli powder, coriander powder and kitchen king masala. Saute for 4-5 mins then cover the wok and let chicken to cook for 12-15 mins , stirring occasionally. 



When chicken become nicely cooked and tender then add tomatoes and almond paste ,fry on high flame till raw smell of tomatoes goes off. Then add beaten curd and saute on high flame for 5 more mins stirring constantly to avoid cuddling of curd.



 Now add water as per your choice of gravy consistency, adjust salt, add sugar. Let it boil then add kasoori methi and simmer for 5 mins, and done. 



Your yummy home style low calorie butter chicken is ready to serve with roti , naan or rice.



Always use fresh yoghurt (curd), otherwise you will end up with sour gravy.

LOW FAT VEG MANGO CHEESE CAKE

In summer, there are mangoes and mangoes everywhere . Everyone is just mad on mangoes these days , making mango cakes, mango ice creams, mango pudding, mango jelly and many more in the row. I am also one of them😊 So after trying my hands on mango jelly and ice cream , now I thought of trying mango cheese cake for first time. But its richness of calories made me always hesitate to try , though I am too fond of trying healthy and guilt free cooking, so came up with a healthy substitute of fatty cheese and cream used in this cake. Accidentally or you can say luckily my 1 1/2 lt of milk got cuddled and hence I got a golden chance for my experiment. As I was not so sure for the perfect end result so missed to click all steps pics but to my surprise, the final outcome is just wow and of course a guilt free dessert.
Recipe is given below, hope you all will definitely like it.

LOW FAT VEG MANGO CHEESE CAKE



Ingredients 

1 1/2 lt milk 
1 tbsp lemon juice or vinegar 
1 1/3 cup mango puree 
2 tbsp sugar, you can add more
5 gm agar agar( China grass)
3/4 cup water
12-15 any sweet biscuit, I used 4 belvita biscuits 
1 tsp ghee or butter

Method:

First of all boil milk, then add lemon juice or vinegar , little by little till it get cuddle. Then strain it in a muslin or any fine cotton cloth. Wash it under tap water to remove sourness of vinegar or lemon from cheese. Then squeeze it well and hang some where for at least 1 hr to drain excess water in it. Now your cheese is ready to use.



Soak agar agar strips in water for at least 20 mins. Then take 3/4 cup of water in a pan, add soaked agar agar and boil. After boiling, lower the flame and let it simmer till agar agar get completely dissolved in water. In meanwhile take cheese in mixer and churn till smooth, both not too much. Now add 1 cup mango pulp and sugar in it and churn again for 2-3 pulses only. Now pour it in a bowl.



Now make powder of biscuits in a mixer and add ghee or butter in it. Take a greased pan of your choice, spread this biscuit ghee mixture in it evenly and press with a spatula to get a firm base.



Now in cheese mango mixture add agar agar liquid, little more than half the quantity. Mix well and pour it on biscuit base evenly. Tap the pan to remove any air bubble formed .  Keep the pan in freezer for 10 mins. Now take 1/3 cup of mango puree and add rest of agar agar liquid and mix well. Now take out the pan from freezer and pour this mango puree all over it evenly and tap the pan to get smooth surface. Now keep the pan in refrigerator overnight. For demolding , run a clean knife along its sides so that it leave the edges of pan then carefully invert it on a chilled plate and then invert it once again on serving plate, and done. But will suggest to either use spring form mold or use butter paper in base to make it easier to demold as mine got little deformed in inverting twice.



 Your mildly sweet guilt free veg mango cheese cake is ready to serve.
Be careful with agar agar, as it can set at room temp too. So when we have to wait for next step then keep agar agar mixture bowl in boiling hot water to avoid its jelly formation. If you want good sweet dessert then you can add more sugar to cheese mixture and also some sugar can be added in upper mango mixture too.

BESAN VEGGIE CHILA ( SAVORY PANCAKE)

What to prepare for tiffin which will be healthy and filling , and most importantly loved by all ,is really big question everyday. So today I am having answer to the same question which I also face every morning.
To prepare healthy and yummy tiffin snacks in morning rush is a real challenge. My today's recipe is really quick , easy , healthy and of course yummy that was loved by everyone. My fussy eater too finished his tiffin. Everyone is familiar to besan chila, but I only added some veggies to it and served in bite size pieces to make it more easier and comfortable to eat. Which made it protein rich, fibre rich as well as presentable snacks. Recipe is given below, hope you will like it.

BESAN VEGGIE CHILA( SAVORY PANCAKE)


Ingredients 

1 cup chickpea flour( besan)
1/3 cup mix veg finely chopped ( spring onion,grated carrots,capsicum,cabbage)
1 tbsp finely chopped green coriander leaves 
1/2 tsp ginger garlic paste
1/4 tsp chaat masala
1/4 tsp turmeric powder 
1/4 tsp black pepper powder
1/4 tsp red chilli powder or 1 green chilli finely chopped 
1/4 tsp lime juice
Salt to taste

Method:

Mix all ingredients together using sufficient water to make a lump less smooth batter of pouring consistency. 



Now heat a nonstick pan and drizzle some oil on it. Pour one laddle full of batter on it and spread in thick round shape chila.
Let it cook till upper side starts to look completely dry. Flip it to other side.


 Apply some oil on it like we do for paratha( completely optional). Cook till both sides get nicely golden.



Now roll it and cut in diamond shapes. 


Your so quick , easy and healthy snacks is ready to be served with any sauce or chutney.



You can also use multigrain atta instead of besan to make missi chila.
It can be made stuffed too. I usually stuff samosa filling in it. You can also stuff paneer filling or mix veg filling too. 
It comes out really so delicious that you will replace unhealthy samosas with it. It is a perfect starter too with no more hassles and healthy too.

CAPSICUM PANEER IN LOW CALORIE CREAMY WHITE GRAVY

Hello everyone 
As I told earlier my kids are big fan of paneer dishes especially gravy ones , so I have to do new experiments everyday to satisfy their little tummy without getting bore. Even everyone at my home are in badly love with paneer☺️. But we have to take care of our growing tummy too, So today I tried this simple , low calorie ( no cashews, no cream and no much oil) yet delicious crunchy munchy paneer dish and hope you will definitely going to love it.
Step wise recipe is given below, do try it.

CAPSICUM PANEER IN LOW CALORIE CREAMY WHITE GRAVY



Ingredients 

2 cup cottage cheese ( paneer)
2 cup milk
1 cup mixed colored capsicum, diced
3-4 big onions, thinly sliced 
8-10 garlic cloves, peeled
1 inch ginger, sliced
3-4 green chillies 
1 slice bread
1 tbsp kitchen king masala
1/2 tsp garam masala
1 tsp kasoori methi,crushed between palms
Salt to taste

Method:

First of all boil onion,garlic,ginger and chilies together . Let it cool and make its smooth paste along with bread slice using little water. Avoid adding too much water while grinding otherwise it will splutter a lot while cooking.



Sprinkle some oil on a nonstick pan and fry capsicum on high flame till it become little charred. Keep it aside .



Now heat 1 tbsp oil in a wok ,add this paste and fry for at least 5 mins. Then add kitchen king and garam masala in it , fry till it starts leaving edges of the wok.



Then add milk little by little stirring continuously to avoid lump formation. Let it boil then add paneer cubes and salt in it and simmer for 5 mins.



Finally add capsicum and kasoori methi,mix well and simmer for 1 more min and done.



You can increase or decrease milk as per your gravy consistency preference, but remember it will thickens on cooling.



Your super easy without fuss low calorie creamy paneer gravy is ready to serve with roti, naan , rice paratha any thing. It's a finger licking dish even can be served in parties too.

LOW CALORIE PANEER IN CREAMY ONION GRAVY

Hello everyone 
My day starts with thinking how to serve easy yet yummy healthy diet to my family. As my kids are too fond of paneer dishes, I have to cook it every second day for them. But the main problem is they also get bore of same taste everytime. So to make them happy I have to experiment with paneer gravies everytime to avoid monotonous flavour of the dish. At the same time I also try to make it simple and healthy too avoiding unnecessary addition of oil, cream etc. without compromising its taste and texture.
Step wise recipe is given below, hope you all will like it.

LOW CALORIE PANEER IN CREAMY ONION GRAVY




Ingredients 

2 cups cottage cheese ( paneer)
2 cup milk
3-4 big onions, thinly sliced 
1/4 medium size red capsicum ( optional)
1 bread slice
1 tbsp kitchen king masala
1 tsp Kashmiri red chili powder 
1 tsp kasoori methi, crushed 
Salt to taste

Method:

First of all boil onion and capsicum in some water till onions get soft and tender. And let it cool. Then blend it with bread slice using little water in a blender to thick smooth paste.
While making paste only use little water other wise it will splutter a lot while cooking and also take much time.



Now heat 2 tsp oil in a wok and add prepared paste. Fry it for 5 mins then add all masalas and again fry till it starts leaving edges of the wok. Then add milk little by little , stirring continuously. 



Let it boil then add paneer , salt and kasoori methi. Simmer for 5 more mins and done.



Your extremely easy and yummy paneer gravy is ready to serve with roti, naan or rice. There is no fuss no complications only a simple delicious quick healthy dish.

WHOLE WHEAT FLOUR EGGLESS APPLESAUCE CAKE

Hello everyone
Today again I have a very easy , healthy and yummy cake recipe. I always thought only cakes with egg are extremely soft and have crumbly texture but after trying this one I can say , I was wrong. In this cake , I can bet you are definitely not going to miss that soft crumbly texture of egg cake. As it came out so soft and moist that surprised me beyond expectation and is equally healthy too as having goodness of apples and fibrous flour with less oil.
Recipe is given below and hope will come upto your expectations.

WHOLE WHEAT FLOUR EGGLESS APPLESAUCE CAKE



Ingredients 
2 cup whole wheat flour
1 1/2 cup unsweetened Apple sauce 
3/4 cup sugar
1/3 cup oil
4 tbsp cocoa powder 
1 tsp baking powder 
1/2 tsp baking soda 
1 tsp vanilla essence 
1/2 cup Nutella ( optional)



Method:

Add applesauce, vanilla essence, sugar and oil together and whisk till sugar dissolves.
Add all dry ingredients together and mix well.
Now add dry ingredients in wet one in two batches and fold gently to get lump less smooth batter.
If batter seems dry some water can be added to get idli batter like consistency of batter. Avoid over mixing. Now in a greased bundt cake pan pour half the batter and then spread a thin line of Nutella on it in middle. Finally cover it with remaining half batter. Immediately bake it in microwave at high for 5 mins. Check it for doneness with toothpick or skewer by inserting in middle of cake, if it comes clean then done otherwise bake for another 30 secs. Let it cool for 10 mins in pan then invert on a wire rack. Slice and serve when completely cool.
It can be made in conventional oven too at 180degree Celsius for 25 to 30 mins. Again check for doneness as different ovens may have different baking time.

For home made unsweetened apple sauce ( for 1 1/2 cup):

 2 apples peeled and thinly sliced
1/4 cup water

Boil apples in water till they become soft. Then let it cool and blend in a smooth paste.
Your easy healthy applesauce is also ready to use.

CHILLI CHANA METHI PANEER

Hello everyone 
I am here with another healthy addition to your diet. Its name tells everything about it. My kids are great fan of paneer so generally my dishes are full of paneer but to have paneer every second day with same taste sounds little weird. To spare us from this boredom of taste I usually give my twist and turns to these dishes to make them more interesting and presentable. So that kids tummy bhi khush aur mummy bhi khush.  

This is so simple yet delicious side dish full of protein and iron. To give it further more healthy touch I avoided using cream and more oil. Even then it is so yummy to be a part of any party menu also.
Step wise recipe of dish is given below ,hope you all will like it.

CHILLI CHANA METHI PANEER







Ingredients 

1 1/2 cup cottage cheese ( paneer)
1 cup finely chopped fenugreek leaves ( methi leaves)
1 1/2 cup boiled chickpeas 
1 cup cubed colored capsicum 
1 1/2 cup milk
2 big onions ( finely chopped in chopper or pureed)
2 tsp ginger garlic paste
3-4 green chilies finely chopped 
1/2 tsp cumin seeds
1/4 tsp asafetida ( heeng)
3/4 tsp cumin powder
1/2 tsp garam masala
1 tsp kitchen king masala
2 tsp curry powder 
1 tsp kasoori methi 
Salt to taste




Method:

First of all drizzle some oil on a non stick pan and stir fry capsicum till they get little charred. It will give little smokey flavor to curry.


Now heat 1 tbsp oil in a wok and add heeng followed by cumin seeds. Let it splutter then add chopped or pureed onion and chilies. 



 Fry till they become light golden and then add ginger garlic paste and saute for 2 more mins.



Then add all masalas and little water to avoid burning of spices. Let it fry till nice aroma comes and It starts leaving edges of wok.



Then add chopped methi leaves and fry for further 4-5 mins till methi leaves get cooked.



Add boiled chickpeas and fry for 2-3 mins.



Now add milk and let it boil.



Finally add paneer, capsicums, salt and kasoori methi. Let it simmer for 5 more mins.



And it's done. You can adjust seasoning and gravy consistency as per your taste at this stage.



Now it's ready to serve. This is so easy and healthy recipe to relish on.




This can be served with roti, naan, rice etc and can be a part of your party menu too.

NO OIL COMPLAN CAKE

Hello everyone
Today I have a simple yet healthy cake recipe for kids. Generally kids are too fond of chocolate cakes and want to have it wherever or whenever they want. Same happened to me this morning when they demanded cake for their tiffin. In the morning we have so much chores to tackle and this demand , to bake, seems to be so irritating and not suitable for tiffin but I planned to give healthy and quick yet kids pleasing cake. So made this whole wheat flour COMPLAN CAKE for them in microwave. And luckily ( as it added another innovation in my cake, so I must say lucky me) I forgot to add oil to my cake batter but to my surprise the cake turned out so soft and moist. This is easiest cake I ever made and of  course yummy too. 
Detailed recipe is given below , hope you all will appreciate it.




Ingredients 

1 1/4 cup whole wheat flour
3/4 cup milk (Luke warm)
1/3 cup sugar (can be increased if want more sweet)
2 tbsp Complan powder
2 tbsp drinking chocolate ( cocoa powder)
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp vanilla essence 
1 medium carrot, grated



Method:

Mix well all dry ingredients together. Add flour mix , carrot and vanilla essence in milk and fold gently to get lump less cake batter. If it looks little thick then add some water and fold to get dosa like consistency batter. Now pour batter in greased microwave save pan and bake at high for 4 mins. Check for done ness by inserting knife or skewer in middle of cake if it came out clean then done otherwise bake for other 30 mins and check again. To make patterns on cake as shown in pic, take two tbsp of batter in a bowl and add 1 tsp cocoa powder to it mix well. Then with the help of spoon make slanting lines of dark brown batter then pour cake batter over it and bake.
You can also use horlicks or any other drink supplement of chocolate flavor in place of Complan.
So enjoy this easy peasy healthy cake made in no time .
