CHEESY AND SPICY OATS PASTA LOADED WITH VEGGIES

Hello everyone

Being a pasta fan , I use to experiment with new taste and flavours by using different healthy options in hand. Though I generally use oats to make sauce for my pastas to make it more healthier but this time used oats pasta , which I got as a sample in mall. It's really worth trying. After trying many saucy pastas , this time I made non saucy yet superbly delicious veggie pasta for breakfast and for my kids tiffin. It turned out so yummy and cheesy that no pasta fan can resist asking for another serving. I just used simple and handy ingredients but the result is just wow. So hope you will too love this simple yet delicious preparation.
Recipe of the same is given below, just give it a try.

CHEESY AND SPICY OATS PASTA LOADED WITH VEGGIES


Serves: 3-4
Time: 30 mins

Ingredients 

2 cup oats pasta , boiled and drained ( keep the drained water)
1 medium carrot, sliced thinly
1 spring onion, chopped 
1/4 cup colored capsicum, sliced
1/2 cup cabbage, shredded
1 big onion, sliced
2 green chillies,finely chopped 
1 tsp ginger garlic paste 
2 medium tomatoes,sliced
2-3 tsp tomato sauce or chilli tomato sauce( as per taste)
1/4 tsp turmeric powder 
1/4 tsp black pepper powder 
1/4 tsp oregano
1/4 cup mozzarella cheese, grated ( you can add more for more cheesy texture)
Salt to taste

Method:

Heat oil in a wok, add sliced onions and chilies,saute till transparent. Now add ginger garlic paste and saute for a minute. Now add carrots saute for 2-3 mins then add all other veggies except tomatoes. Saute for 4-5 minutes then add turmeric powder, black pepper powder ,salt and sliced tomatoes. Again saute for 4-5 minutes and add drained pasta. Saute for 3-4 minutes. Adjust salt, add tomato or chilli tomato sauce ,oregano and mozzarella cheese , mix well and serve hot. Your ooey gooey cheesy pasta is ready to serve. Enjoy hot with a cup of tea or coffee.



 
*You can use any pasta of your choice and availability.

*You can also add any veggies of your choice like peas, sweet corns, brocoli etc. I used whatever was in hand.



* If you feel pasta looks too dry then can add 2-3 tbsp of pasta drained water and mix well. Consistency will become fine without much effort.



* Always boil pasta to the recommended time on its packet. Never over do it otherwise it will spoil the whole dish.

*  You can adjust spices as per your taste.

HEALTHY MANGO , KIWI AND STRAWBERRY POPSICLES, WITHOUT ADDITIVES

Hello everyone

Today I have summer cooler easy peasy fruit Popsicle recipe. As summer started and everyone need some chilling cooler to beat the heat.
With hot summer the first pleasing name comes to mind is the king of fruits MANGO. I think no one can say 'no' to this yummy droolsome fruit, everyone from kids to elders love it, Even my mom is a big fan of mangoes. So thought to try my hands on mango popsicles but also added some kiwi and strawberries to make it more fruity and attractive to kids , and used just fruits with no compromise in taste. It is so easy, no cook , no fuss recipe that can be prepared in minutes. And the end result is so tempting and yummilicious that you can't resist yourself asking for another one.  Even my fussy eater kids loved it.

HEALTHY MANGO , KIWI AND STRAWBERRY POPSICLES, WITHOUT ADDITIVES





Yield: 12-14 Popsicles, depend on size of mold
Time: 10 mins ( leaving freezing time)


Ingredients 

2 big size , nice ripe mangoes, roughly chopped
2 kiwis, peeled and roughly chopped 
250 gms strawberries ( fresh or frozen)
Sugar to taste ( depend on sweetness of mango), I used 4 tbsp for mango and 2 tbsp for kiwi and 2 tbsp for strawberries

Method:

Take mango , sugar and some water, if needed ,in a blender and churn to nice thick smooth paste.

Similarly make paste of kiwi & strawberries, sugar and some water( separately)
 
** Don't add too much water as we want nice thick paste like idli batter not runny liquid. Too much of water may lead to excess ice crystals in your final outcome and they will also mix with each other and you will not get nice patterned Popsicle.




Now pour spoon full of the prepared mango paste in Ice cream molds then kiwi paste and then strawberry paste and place the mold sticks . You can make as many layers of desired thickness . Now keep it in freezer overnight or minimum 6-7 hrs.




Now demold Popsicles  by putting mold under running water. Serve and see the happiness on faces , without any guilt.




* Your prepared paste should be thick like idli batter. 
* If you paste is not thick enough then don't worry, keep it in freezer for 20-30 mins or till it become enough thick. But don't keep for more than 1 hr as it will become solid to pour .

*You can also use canned mango pulp, nearly 1 cup.

* Adjust sweetness as per your taste.




* You can also add some fruit chunks if your kids like, as mine are so fussy to have fruit chunks in their Popsicle so I avoided. 




* You can also use any other fruit of your choice to make it more personalized to your Taste buds

WHOLE WHEAT FLOUR NO YEAST INSTANT KULCHA

Hello everyone

Who don't like kulchas, whether stuffed or plain , these are one of the favorite breakfast in North Indian houses. But it is a bit different from regular parathas as it's more softer and fluffier than those. That's why kids prefer it over parathas.Though my younger one is very picky eater so to feed him different veggies I have to exercise my mind ,a lot. This time I thought to make these kulchas and serve with their favorite combo and viola it was a hit, as my lil pie finished his lunch box. You can prepare it with any filling of your choice .Generally kulchas are made with yeast but here I made instant version without yeast, that can be prepared in jiffy too. As in the morning we don't have enough time for proofing of yeast dough so this will be a savior for you and equally yummy and fluffy too. 
Recipe is given below , hope you all will love to try it. 

WHOLE WHEAT FLOUR NO YEAST INSTANT KULCHA



Serves: 3-4
Time: 30 mins

Ingredients 

For dough:

2 1/2 cup whole wheat flour/ chapatti flour/ all purpose flour ( as per your choice )
1 cup thick yogurt ( curd)
1/2 tsp baking soda
1/4 tsp salt
1 tbsp oil

For sprinkling on kulcha:

Nigella ( kalonji) seeds
Sesame ( til) seeds
Chopped coriander leaves

Butter/ ghee for cooking kulcha


Method: 

For dough:

First of all mix all dough ingredients together except yogurt. Now using yogurt knead a soft dough. It may be little sticky but don't worry after resting it will become easy to handle. If needed use little water to get nice soft dough. Don't knead too much just 2-3 minute of kneading is enough . Now cover it and keep it to rest for atleast 10 -15 mins.



For kulcha:

Take a big lemon size of dough and flatten it . Now roll it in nice thick round / oblong shape using rolling pin and some dry flour. Now sprinkle some nigella, sesame seeds and coriander leaves all over it on one side. Now again roll lightly to stick sprinkles to kulcha. 



apply some water on one side of it and place on a preheated tawa with water damped side facing down. It will stick to tawa nicely. 

Now cook it on medium flame till you see it's upper side getting nice dry and bubbles on it. 

Now flip it and apply some butter or ghee all over it as we do with paratha. 

Cook till it get nice golden patches on it. Keep flipping in between to get both sides cooked evenly. 



Similarly make all kulchas. 



Your soft, fluffy and delicious kulchas are ready to serve with any side dish of your choice. 

You can serve it for breakfast, dinner or even in lunch box too. 



You can also prepare it stuffed and serve with any side dish of your choice. 



*Stuffing can also be done according to your choice and availability.

NO DEEP FRIED GOBHI MANCHURIAN

Hello everyone

Now a days everyone is just mad over Chinese cuisine, but as we are Indians and love to give every thing a Desi touch, today i am having a very tempting and quick Indo Chinese recipe. You will definitely fall in love with this delicious combination of Indian plus Chinese cuisine. As we all know veggies are too good for health even then kids don't want to dig in. So to feed them this nutritious stuff try this delectable recipe and I bet you will be surprised to see them asking for more, as I was when my lil one asked😊. You can serve it either in evening snacks or as side dish for roti/ paratha/ poori/ fried rice.
Step wise recipe is given below, do try and let me know too, how's it turned out for you😊

NO DEEP FRIED GOBHI MANCHURIAN





Serves: 4-5
Time : 30 mins

Ingredients 

2 cup cauliflower florets
1/2 cup spring onion and capsicum, thinly sliced( optional)
1 medium onion, finely chopped
1 tbsp garlic, finely chopped
1-2 green chilies, finely chopped 
1/2 tsp ginger garlic paste
1 tbsp corn flour
2 tsp white vinegar
2 tsp chili garlic sauce
1-2 tsp soya sauce
1/4 tsp black pepper powder
Salt to taste
Oil
Spring onion for garnishing

For marination:

2-3 tbsp cornflour 
2 tsp chili garlic sauce
1/4 tsp black pepper powder
1/2 tsp soya sauce
Salt 



Method:

First of all blanch cauliflower florets in hot water till it is half done. Now drain it in a colander and wait till all extra water is drained .
Now add all ingredients mentioned under marination section, mix well and keep aside for 10-15 mins for marination.




Now heat 1 tbsp oil in a non stick wok and saute cauliflower florets on medium heat stirring occasionally till they become nice golden and crisp. Cover it with lid in between sautéing to ensure even cooking of florets. Keep aside for later use. 



Now heat 2 tsp oil in the same wok and add chopped garlic and chilies, let it be golden then add chopped onions .



Fry till onions become little golden. Add capsicum and spring onion, saute for 2-3 mins on medium flame. Add ginger garlic paste and saute for a minute.



 Now mix 1 tbsp corn flour, 2 tsp chilli garlic sauce, soya sauce and vinegar in 1/2 cup water( you can adjust these as per your taste preference) . Add this to wok slowly, stirring constantly . 

*Add water as per your preference of consistency, either you want it dry or with curry. I made with curry as my kids love to dig in curry more than pieces, so added sufficient water. 

Now add black pepper powder and mix well.

** Amount of seasoning , corn flour and sauces also depend on how much water you are adding, so adjust accordingly.



 Let it boil and add salt and fried cauliflower florets to it. Mix well and cook for another 4-5 mins , till every thing is well done.




 Now switch off the flame and garnish with spring onions. 




If serving for tea time snacks then don't add much water and serve immediately to have it crunchy and crispy. Otherwise serve with roti / paratha/ poori / fried rice in lunch or dinner. It can be a perfect lunch box option too, for you and your kids. 




It's very simple yet delicious treat that can be prepared in jiffy , even if you have some unexpected guest at your home and want to serve them something special, delicious yet quick.

DESIGNER VEGGIE RAWA MINI IDLIS

Hello everyone

Every mom have tension of what to give in her kids tiffin so that they will finish without nakhre. And the problem worsen when your kid is a fussy eater like mine. My daughter used to finish her tiffin most of the time but my lil one always have excuses for leaving his snacks. So I always have to try new things for him, which can attract him to eat. Today I made rawa idli with lots of veggies in it but in different attractive shapes. I have many silicon molds, that came as a savior for me. This dish is not unknown to maximum of you but still sharing mine version to help those moms, who are looking for interesting , healthy and quick tiffin ideas for their fussy eaters.
Recipe is given below , hope you all will try it.

DESIGNER VEGGIE RAWA MINI IDLIS



Serves: 3-4
Time: 20 mins( leaving resting time)

Ingredients 

1 cup semolina ( rawa or sooji)
1/2 cup yogurt ( curd)
Water as per need
1/4 tsp salt
1/2 cup finely chopped veggies (grated carrots, capsicum, spring onion)
1 green chili, finely chopped ( optional)
1 tbsp green coriander leaves, finely chopped
Baking soda or eno

Method:

First of all mix semolina, yogurt, salt and required water to make a lump less idli batter. Let it rest for 1 hr or overnight at any cool place , if planning to prepare early morning.

* But never keep in refrigerator other wise semolina will not absorb liquid.

* for quick result use hot water to make batter and let it sit for 1/2 an hour.

If after soaking,you find your batter thicker than regular idli batter then add little water at a time and correct the consistency. Now add all veggies, coriander leaves and chilies. Mix well, your batter is ready to be used. 

Now separate required batter in another bowl, which can be used to fill your mold at a time. Now add two pinches of baking soda or half tea spoon eno powder to separated batter. Give a quick stir you will see nice frothy batter , don't over mix the batter otherwise all the air bubbles formed ,will vanish and result in hard idli. 

Now fill the mold immediately with required batter and either steam as regular idli for 8-10 minutes or microwave for 3- 4 minutes, depend on size of mold and microwave power. Let it rest for 2-3 minutes then demold. Similarly make all the idlis and serve with coconut chutney or any sauce of your choice.



Kids like this idli very much, and in this way you can feed them some veggies also. 

*  You can add any veggies of your choice.

* After adding soda or eno , use the batter immediately. That's why add soda or eno in batches of batter, when needed.



* For more soft idlis, use eno instead of baking soda. But baking soda also works well.

* If you are making idlis in microwave then keep a bowl with some water along with the idli mold, to get nice moist idlis.


* While using microwave, keep an eye on it as over doing may result in dry and hard idlis. Mine took maximum 3 minutes.

If you don't have silicon mold just use your regular mold and prepare these healthy and delicious tiffin snacks for your kids.

LOW CALORIE EGGLESS MINT AND GARLIC MAYONNAISE

Hello everyone 

Now a days, not only kids but elders too gone mad over burgers, sandwich,pizza etc loaded with high calorie , high fat mayonnaise. But by health point of view these are not good at all. So I thought why not try some low fat, low calorie version of mayonnaise to go with these traditional fast food items  to avoid some extra calories without punishing our taste buds. This can be also used on simple whole meal or brown bread as spread, if you are health conscious fellow but can't leave the love of having yummy finger licking mayonnaise. I came across this recipe accidentally, as I was trying to make some different dip for my snacks and to my surprise it came out as super smooth silky shiny mayonnaise.
Recipe is given below, hope you all will definitely love to try it.

LOW CALORIE EGGLESS MINT AND GARLIC MAYONNAISE



Serves: 5-6
Time: 10 mins

Ingredients 

1 cup cottage cheese (soft creamy paneer) 
1/2 cup fresh thick yoghurt,curd ( low fat can be used)
1 tsp corn flour
15- 20 fresh mint leaves
1/2 tsp white pepper( I used black pepper) 
2 tsp garlic powder ( or you can also use 5-6 fresh Garlic cloves)
Salt to taste

Method:

Add all the above ingredients in a mixer jar and blend till it become creamy batter like.


Then put it in a microwave safe bowl n cook for 2-3 min stirring every 30 sec to avoid lump formation and even texture till it acquire the consistency of mayonnaise. 


If u find it little thinner then don't worry it will thicken after cooling.



**
Always use soft cheese otherwise u will get grainy texture.

For different flavor u can skip mint and add 1/2 cup of chilli sauce to it to make chilli mayonnaise.
You can add different herbs like oregano, thyme, basil etc to get herbed mayonnaise.


It's so quick n easy recipe that u can make daily n enjoy different flavours without any guilt.
It can be kept in airtight covered jar for 1 week to 10 days in refrigerator .

It goes well with any snacks as dip or use in burgers, sandwich etc.

COCONUT FILLED CHOCOLATES

Hello everyone

Who doesn't like chocolates ? If you ask this question to kids or even to elders too, then you get the same answer from everyone that we all love chocolates. Even during festivals, people prefer chocolates over traditional sweets, to gift . And if it is home made then just icing on cake. I am a sweet tooth and always love to relish on all sweet things including different varieties of chocolates. But as a health conscious fellow I too have to check on calories sometimes. That's why I thought to give it a try at home , with my choice of ingredients and with balanced sweetness. And to my surprise my chocolates came out perfect in first trial, with mild sweetness and subtle flavour of coconut, just like bounty chocolates, which are kids all time favorite. 
I used dark chocolate bar  to prepare my choice of chocolates, you can substitute it with your choice.
Stepwise recipe is given below, hope you all will love to try this and don't forget to share your experience with me.

COCONUT FILLED CHOCOLATE



Yield: 16-20 chocolates( depend on size of mold)
Time: 15 mins ( excluding refrigerating time)



Ingredients 

100 gms dark compound chocolate bar
2 tbsp butter
2 tbsp powder sugar ( or as per taste)
1/4 cup milk ( as per need)

For filling:

1/4 cup desiccated coconut 
1 tsp powder sugar
1 tbsp milk ( as per need)


METHOD :

First of all prepare filling. Mix sugar and desiccated coconut. Now add milk little by little and mix well. When the mixture is moist enough to hold shape then your mixture is ready, no need to add more milk now. Make small balls of this mixture which can be easily placed in your chocolate mold. Keep balls aside for later use.



** only use required amount of milk in your coconut mixture, neither too dry nor too runny, just enough moist to hold shape easily.


Now break your chocolate bar in small pieces and keep in microwave safe bowl . Microwave it for 2 mins, stirring after every 30 sec to avoid burning it. Mine took 2:30 mins as my chocolate bar was chilled . 
You can also use double boiler to melt your chocolate. Take hot boiling water in a pot and chocolate in another . Now place chocolate pot over water pot, so that chocolate can melt due to hotness of water. *** But there must not be any direct contact between chocolate and water otherwise your chocolate will be ruined.


Now add butter and again microwave for 30 secs. Now add powder sugar and mix well. At this time your mixture will look little dry. 



So add milk , 1 tbsp at a time and stirring constantly to get thick yet smooth pouring but not runny consistency of chocolate batter. 



** No need to add all milk, just add as per requirement . As quantity of milk added depend on quality of chocolate bar, so add and keep an eye on your batter to get right consistency.


Now take your chocolate mold, I used silicon mold as it is easy to handle, pour little chocolate in each section and then place prepared coconut balls on it. Now pour more chocolate on each coconut balls , so that to cover it completely. Tap the mold to escape any air bubble trapped and place in refrigerator for 30 mins to 1 hr.


 Now take it out and demold, your yummy homemade bounty chocolates are ready to attack on☺️☺️.


* You can use any filling of your choice.
* You can increase or decrease sugar as per your taste.


* To make your filling more rich in flavour you can substitute milk and sugar with condensed milk as per requirement.


You can prepare these chocolates in any shape and size for your kids school party, for birthday celebrations or to gift any one. 


It's really fun to make your own chocolates and share with your pals.
